Ingredients
Pan-Seared Zucchini
- 1 medium garlic clove, peeled
- 1 teaspoon olive oil
- 1/4 teaspoon dried red chili powder
- 4 medium zucchinis, sliced into 1.3 cm thick rounds
- Salt

- 2 zucchinis
- 1 egg white
- 1/4 cup milk
- 1/2 cup grated Parmesan cheese

Zucchini Bread
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoons cinnamon
- 3 eggs
- 1 cup vegetable oil
- 2 1/4 cups white sugar
- 3 teaspoons vanilla extract
- 2 cups grated zucchini
- 1 cup chopped walnuts
Yield: 2 loaves of bread | 1 hour 40 minutes
Steps
Pan-Seared Zucchini

Finely chop the garlic. Place the garlic on a cutting board and finely chop it with a kitchen knife.
Heat olive oil in a large frying pan over medium heat. Add garlic and chili powder to the pan and stir for 30 seconds. Remove the garlic from the pan (optional).
Add the sliced zucchini to the pan. Use wooden chopsticks to stir until each slice is evenly coated with oil.
Pan-sear until both sides of the zucchini slices turn brown, then flip and sear for another minute. Remove the pan from heat and season with salt and pepper.

Transfer the zucchini to a plate and serve immediately. Sprinkle a bit of Parmesan cheese on top if desired.
Health-Promoting Grilled Zucchini

Preheat the oven to 220°C.
Cut the zucchini into sticks. Each zucchini stick should be about 7.5 cm long and 1.5 cm wide, similar to a French fry shape.
Whisk the egg whites and milk together in a small bowl. In a separate bowl, mix the cheese and breadcrumbs.

Spray a baking sheet with non-stick spray. Alternatively, you can line the sheet with foil to prevent sticking.
Dip each zucchini stick into the egg white mixture, then coat it in the breadcrumb mixture. Arrange the zucchini sticks on the baking sheet.

Bake for about 20-25 minutes. The zucchini sticks should be golden brown once baked.

Remove the zucchini from the oven and enjoy!
Zucchini Bread

Preheat the oven to 160°C. Grease and flour two 12 cm x 23 cm loaf pans.
Use a grater to shred the zucchini. There's no need to peel the zucchini before grating.
Combine flour, salt, baking powder, baking soda, and cinnamon in a large bowl.
Whisk the eggs, oil, vanilla extract, and sugar in a separate bowl until smooth.
Blend the egg mixture with the flour mixture.
Add the flour and walnuts, and mix thoroughly. Pour the batter into the pan.

Bake for about 40-60 minutes. Use a fork to check if the cake is done. If the fork comes out clean, the cake is ready.

Remove the cake from the oven. Let it cool for about 20 minutes before taking it out of the pan.

Place the cake on a plate and enjoy!
Tip
- Since zucchini skin is soft, there is no need to peel it before cooking.
- Zucchini can be served as a side dish, added to salads, or mixed into pasta for a main dish.
- Try grilling zucchini with various herbs, spices, and sauces for a delicious variation.
- When selecting zucchini at the store or farmer's market, choose ones that are fresh green and no longer than 25-30 cm in length.
