Roasting onions not only enhances their natural sweetness, but also brings numerous health benefits. Regularly eating onions can help prevent cancer and improve bronchitis symptoms. If you combine onions to boost the flavor of dishes while enhancing health, follow the steps below for roasting onions.
Steps
Prepare the Grill and Ingredients

Clean the grill rack. It’s important to clean the grill rack before use, especially if you plan to place the onions directly on it. Additionally, using a clean grill ensures the food cooks better.
- To clean the rack, apply a small amount of vegetable oil to a paper towel and wipe each rack bar. Alternatively, you can pour oil directly onto the rack and use a spatula or other tools to scrub off residue or rust if needed.
- Some grills have a "cleaning" mode. If the above methods aren’t enough, you can use this mode (if available) to clean the rack.

After cleaning, spray a bit of oil on the grill to prevent sticking. The oil not only helps clean the grill but also keeps food from sticking. Make sure to do this before turning on the grill, or else the oil will evaporate.
- You can use any type of oil. Since this oil is not meant for grilling onions, inexpensive vegetable oil will work just fine.

Decide whether to use aluminum foil, a grilling basket, a roasting pan, or skewers. Using a tool when grilling sliced onions is the easiest way to ensure they cook evenly and do not fall through the grill grates. You can use aluminum foil, a grilling basket, a roasting pan, or skewers.
- Alternatively, you can simply place a piece of aluminum foil on the grill and puncture holes for heat to escape.
- If using skewers, soak them in water beforehand to avoid them catching fire.

If you don’t have any of the above tools, it’s best to grill the onions either whole or in large slices. However, grilling large round slices is easier since grilling whole onions may result in uneven cooking.
Decide which ingredients to brush onto the onions. Olive oil, salt, pepper, or a blend of your favorite spices can be used to coat the onions before grilling. Some people even enjoy using butter and reduced beef broth. Whether grilling sliced onions or whole bulbs, you can apply the following suggested ingredients:
- Honey mustard
- Balsamic vinegar
- BBQ sauce
- Worcestershire sauce
- Steak seasoning
Grilling Sliced or Wedge-Cut Onions

Buy large, firm onions from the store. Vidalia onions are favored by many for their size and taste. Sweet onions are the most popular variety, while yellow onions are also quite common.
- Any variety of onion can be roasted as long as it's large and fresh. When roasting whole onions, it's best to pick one that is evenly shaped so that it cooks uniformly.
Cut off the onion's top and peel the skin. Remove the dry outer layers. Check the inside layers to ensure they aren't wilting or spoiled, and peel them off if necessary. Be careful not to remove too much, as you want to preserve the onion's flesh.
Slice the onion. To slice the onion, hold the root end and place the onion sideways on the cutting board. Your hand and the root should be level with the board. Slice the onion into approximately 1.5 cm thick slices.
- If you're cutting into wedges, avoid slicing the onion from top to bottom, as this will cause the wedges to fall apart. Instead, cut the onion into 2.5 cm wide wedges, aiming for 4-6 wedges.
- These slicing methods are just suggestions. You can cut the onion into slices or wedges according to your preference. However, note that smaller slices are more likely to fall through the grill grates, so if you choose smaller pieces, use a tool to prevent them from slipping through.
Brush olive oil and seasonings onto the onion slices. You can use any seasoning you prefer, such as salt, pepper, or garlic powder. Alternatively, you can use the suggested seasonings, but olive oil, salt, and pepper are the most common. Be sure to coat both sides of each onion slice.
Preheat the grill to medium heat. Place the onion slices directly on the grill. You can also use a grilling basket or create a foil tent if you prefer. Grill for 3-5 minutes, or until you notice black spots on the onion slices. Thicker and larger slices may require about 7 minutes of grilling.
- To create a foil tent, simply place a few onion slices on a sheet of foil. Then, fold the two long edges over the onions to cover them, and tightly seal the foil edges.
- Using skewers is an effective way to grill onion wedges without them falling apart. Be sure to soak the skewers in water beforehand to prevent them from catching fire.
Use tongs to flip the onion slices. Continue grilling for another 3-5 minutes or until you see black spots on the onion slices. At this point, feel free to add more seasoning or brush on additional olive oil if desired.
- Taste the onion. Take a small bite to check if the onion is tender yet still retains some of its original crispness, and if it has a brown outer layer. If so, the onion is properly roasted.

Remove the onion slices from the grill and enjoy. Grilled onions are delicious on their own, but you can also incorporate them into salsa, dipping sauces, baked beans, curry dishes, or other vegetable dishes.
Grilling Whole Onions
Peel off the dry outer skin. Check for any wilted or spoiled inner layers and peel them off if necessary. Continue peeling until you reach the desired onion layer.
- Keep the root end of the onion intact. The root will help hold the onion together while cooking.
Slice the onion. Cut off one-third of the onion’s top. Next, remove the core by inserting a knife into one corner of the core. Be careful not to cut all the way through the bottom (if you do, the onion will fall apart). Continue cutting around the core until it can be removed while keeping the bottom intact.
- From the core, use your knife to cut into the onion layers, but avoid slicing into the outermost layer. This will allow the seasonings to penetrate each layer evenly.
- Alternatively, you can make small holes around the middle of the onion with the tip of your knife. Instead of placing seasonings inside the core, you can place them in these small holes.

Season according to your taste. Most people apply basic seasonings like butter or olive oil. Afterward, you can add your favorite spices such as salt, pepper, garlic powder, or other recommended seasonings.
- Combine herbs and spices, or pre-made seasoning mixes (such as steak seasoning) to bring out the natural flavors of the onion. Keep in mind to choose sweet or savory seasonings depending on the dish you're pairing with the grilled onion.
Wrap the whole onion in foil. Place the onion on the grill over medium heat and cook for about 20-30 minutes. Limit your checks to just 1-2 times to prevent losing heat.
- Some onions (and grills) may require up to 45 minutes of cooking. Don’t worry if your onion needs more than 20-30 minutes; this is typical for larger onions. If you're unsure if it’s done, grill it a little longer. If the onion is only slightly warm, it's not fully cooked yet.

Remove the onion from the grill and enjoy. A grilled whole onion is often considered a complete dish, and you can simply add some fresh salad and a slice of bread. However, if desired, you can use the grilled onion to make stews, curries, or other vegetable dishes.
Tips
- When slicing onions, don’t cut off the root end. Keep the root intact to help maintain the shape of the onion and make it easier to slice.
- This guide uses Vidalia or yellow onions as examples. However, once you’ve mastered grilling onions, you can try different varieties. Each type has a distinct flavor and can add a unique taste to your dishes. The most common varieties are yellow, white, red, and purple onions, which are available at most grocery stores.
- If your grill has large gaps or if the onion slices are small enough to slip through, use a grilling basket. To make one, fold a piece of foil in half and raise the edges about 2.5 cm. Then fold the corners and twist them tightly. Place the sliced onions in the basket and set it on the grill.
- The longer you grill the onions, the softer they become. Experiment with different grilling times to find the perfect texture for your taste.
Warning
- When slicing the onion, make sure to place it on a dry cutting board to prevent slipping. Also, keep your fingers curled or together and away from the knife blade while cutting.
