Marinating a whole turkey a day before roasting it helps enhance its flavor, creating a truly unforgettable taste. You can season the turkey with various spices, along with a bit of salt and pepper. After marinating, follow the recipe instructions for cooking the turkey. This will ensure a delicious main dish to share with your family and friends.
Steps
Prepare the seasoning

Use traditional seasoning for Thanksgiving. If you're cooking a turkey for Thanksgiving or another holiday, you can try using the classic seasoning with a bit of sage and parsley. This seasoning brings a traditional flavor that the whole family can enjoy.
- Start by adding 1/4 cup of finely chopped fresh parsley to a bowl. Then, add 1 tablespoon of sage, rosemary, and thyme. Follow with 2 tablespoons of olive oil and melted butter, plus 1/2 teaspoon of salt and pepper. The type of olive oil you use doesn’t matter.
- Mix all the ingredients together until a smooth, well-combined mixture forms.

Try using a lemon-based seasoning. If you're looking for a twist, you can opt for a lemon seasoning to add a salty, fresh flavor to your turkey.
- Mix 1/2 cup of unsalted butter with 1 teaspoon of lemon zest. Then, add 1 teaspoon of finely chopped thyme and 1 teaspoon of oregano.
- Blend the ingredients together until you achieve a smooth, uniform mixture.

Use a garlic-based seasoning. Many people enjoy the taste of garlic. If you're one of them, a garlic seasoning is an excellent choice for marinating your turkey.
- Mix 3 tablespoons of butter (at room temperature) with 2 tablespoons of rosemary and 2 tablespoons of thyme.
- Mash 3 cloves of garlic and combine them with the butter and herb mixture.

Use maple syrup marinade. If you prefer a sweeter turkey, maple syrup is a great option. Maple syrup marinade adds a delightful, unexpected flavor to the turkey.
- In fact, you can brush the maple syrup marinade onto the turkey about 2 and a half hours after it’s been roasted. Mix 2 tablespoons of natural meat drippings with 1/2 cup of maple syrup. Then, brush the mixture all over the turkey.
- Afterward, continue roasting the turkey for an additional 15 minutes to allow the marinade to absorb.
Apply the seasoning to the turkey
Spread the seasoning evenly on the turkey. Typically, you would season the turkey before roasting. However, for the maple syrup marinade, you apply it after roasting. For other seasonings, you can spread them over the turkey before it’s cooked.
- Use enough seasoning to thoroughly cover the entire turkey. Make sure to apply the seasoning all over, including the legs.
Place the remaining seasoning inside the turkey. If you have leftover marinade, don't throw it away. Instead, apply a bit of it to the inside of the turkey's cavity. This will enhance the turkey's flavor, giving it a stronger taste after roasting.

Roast the seasoned turkey according to the recipe instructions. Once the seasoning is applied, follow the roasting guidelines in the recipe. Generally, turkey should be roasted at around 165°C for a minimum of 2 hours.
- Use a meat thermometer to check if the turkey is fully cooked. It must reach at least 165°C for safe consumption.
Ensure the turkey's quality.

Determine the amount of seasoning needed. For a larger turkey, you'll need more seasoning than what the recipe suggests. To figure out the correct amount, place the turkey in the roasting pan.
- Slowly pour water into the pan until the turkey is fully submerged.
- Remove the turkey and measure the amount of water. This is the amount of seasoning you should use.

Choose high-quality turkey. Even the best seasoning won't improve the flavor of a low-quality turkey. Before marinating, ensure that you buy a high-quality turkey. Look for one weighing between 5-9 kg, and avoid those stored with artificial additives or preservatives.
