1/4 cup chopped smoked almonds

2 Tbsp freshly chopped flat-leaf parsley

1 tsp. lemon zest along with 1 Tbsp. fresh lemon juice (from 1 lemon)

1/2 tsp crushed red pepper flakes

4 Tbsp olive oil, divided

1 large shallot, thinly sliced

2 garlic cloves, thinly sliced

2 lbs broccolini, trimmed
Instructions

In a small bowl, combine almonds, parsley, lemon zest, and crushed red pepper flakes.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add shallot, garlic, and 1/4 teaspoon of salt, stirring occasionally until softened, about 4 minutes. Add the broccolini, the remaining 2 tablespoons of olive oil, and 3/4 teaspoon of salt. Toss to coat the broccolini in the oil. Pour in 1/2 cup of water.

Cover the skillet and cook the broccolini until it’s crisp-tender, about 4 minutes. Uncover and cook for another minute or so until the liquid evaporates.

Add fresh lemon juice. Transfer to a serving dish and top with the almond mixture.
