If you don't have a microwave, you can melt the chocolate using a makeshift double boiler. Just fill a medium saucepan with an inch or two of water and bring it to a simmer over medium-high heat. Then place a small saucepan or heatproof bowl into the larger pan, ensuring the water doesn't touch the bottom of the smaller vessel. Add the chocolate and stir until it's completely melted, adjusting the heat if needed.

Instructions
Melt the chocolate:
Place the chocolate chips in a microwave-safe bowl and microwave at 50% power for approximately 3 minutes, stirring every minute, until completely melted. Stir in the coconut oil. Then, pour the melted chocolate into a tall, narrow glass or measuring cup for easier dipping.
Cut the apples:
Cut the apples into slices about 1/4-inch thick.
Dip and chill the apples:
Dip each apple slice halfway into the chocolate mixture and place them on a parchment paper-lined plate or a rimmed baking sheet. Immediately top with your desired toppings. Chill in the refrigerator for 15 minutes, or until the chocolate hardens.
Prep Ahead: Honeycrisp apples can be stored in the fridge or at room temperature for up to 2 hours without turning brown.
