In a large bowl, whisk together orange juice, soy sauce, mint, ginger, vinegar, and 1/4 cup of oil. Reserve 1/4 cup of this mixture in a medium bowl. Add the chicken to the medium bowl and toss to coat. Set the large bowl with the remaining dressing aside.

Heat the remaining 1 tablespoon of oil in a large skillet over medium heat. Add the chicken in a single layer and cook, turning occasionally, until browned and a thermometer inserted into the thickest part reads 165°F, approximately 10 minutes. Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing it thinly.
