Ready-made wonton wrappers are baked to a golden crisp, while ground pork is seasoned with ginger, garlic, soy sauce, vinegar, and sriracha for a quick stovetop cook. Pre-shredded coleslaw and carrots simplify veggie prep, making this dish both nutritious and time-efficient. It’s a deconstructed egg roll experience topped with crunchy wonton strips that will leave you craving seconds.
Transform this dish into a fried rice-inspired meal by mixing in cooked rice with the coleslaw and carrots. For an eggy twist, create a space in the center of the pan, crack an egg into it, scramble, and cook until set. Then, blend the egg into the pork mixture for added richness.
Ingredients

10 wonton wrappers

2 Tbsp toasted sesame oil, divided

1 lb. ground pork

1 1/2 Tbsp. finely chopped garlic (from about 5 cloves)

2 tsp. grated fresh ginger (from a 1-in. piece)

1/4 cup soy sauce

2 Tbsp rice vinegar

1 Tbsp sriracha
-
10 cups coleslaw (from a 10-oz. pkg.)

1 cup matchstick carrots (from a 10-oz. pkg.)

Sliced scallions, for garnish (optional)
Directions
Preheat oven and prepare baking sheet
Set your oven to 400°F. Cover a large baking sheet with parchment paper. Lightly coat both sides of the wonton wrappers with 1 tablespoon of oil. Slice the wrappers into 1/2-inch-wide strips and arrange them on the prepared baking sheet.
Bake wontons
Bake the wontons until they turn a light golden brown, approximately 5 minutes. Allow them to cool fully on the baking sheet for about 10 minutes.
Cook pork until browned
In the meantime, heat the remaining 1 tablespoon of oil in a large skillet over medium-high heat. Add the pork and cook, breaking it apart occasionally, until it’s browned, roughly 5 minutes.
Cook garlic and ginger; add sauce and simmer
Add garlic and ginger to the pork in the skillet; cook, stirring continuously, until aromatic, about 30 seconds. Pour in soy sauce, vinegar, and sriracha; cook, stirring occasionally, until the sauce thickens and coats the pork, approximately 2 minutes.
Cook veggies and serve
Mix in coleslaw and carrots; cook, stirring constantly, until the vegetables are tender yet crisp, 1 to 2 minutes. Serve garnished with scallions (if desired) and crispy wonton strips.
