Nutty farro, a hearty wheat grain with a chewy texture, is cooked and tossed in a white balsamic dressing. Grilled summer squash chunks are then coated in the same zesty dressing. Parmesan and basil bring extra flavor, while rich Marcona almonds add a touch of luxury to this whole grain salad. (If Marcona almonds are unavailable, roasted salted almonds will work too.)
To prepare this salad in advance, store it in the fridge for up to 24 hours, omitting the basil, almonds, and cheese. Before serving, let it come to room temperature for 30 minutes, then add the toppings.

1 1/2 cups farro

2 tbsp balsamic vinegar

1 1/2 tsp salt

6 tbsp olive oil

4 medium yellow squash and/or zucchini, trimmed and halved lengthwise

1/2 cup roughly chopped almonds (preferably Marcona), plus extra for topping

1/4 cup grated Parmesan cheese

1/4 cup basil leaves
Instructions

Cook the farro in salted water according to the package instructions. Drain and transfer to a large bowl. Let it cool for 10 minutes, stirring occasionally.

In a separate large bowl, whisk together the vinegar, salt, and 5 tablespoons of olive oil until well combined. Add half of the dressing to the farro and toss to coat evenly.

Preheat your grill to medium-high (400°F to 450°F). Brush the squash with the remaining tablespoon of olive oil. Place the squash, cut side down, on the grill grates and cook, covered, until tender and charred, about 3 to 4 minutes per side. Remove from the grill and let cool for 5 minutes on a cutting board.

Cut the squash into 1-inch diagonal slices. Add them to the bowl with the remaining dressing and toss to coat. Stir the almonds and cheese into the cooled farro and toss. Transfer everything to a platter in an even layer, then top with the grilled squash, basil, and additional almonds and cheese.
