Can You Freeze Potatoes?
The quick answer—especially if you’re familiar with frozen french fries and tater tots—is a definite yes. Freezing potatoes is an excellent way to extend their shelf life.
However, there’s an important consideration: Proper preparation is key before freezing. When raw potatoes are exposed to cold temperatures in the fridge or freezer, their starches begin converting into sugars like glucose and fructose. This can lead to an overly sweet taste and a gritty texture, which might not be ideal for dishes like mashed potatoes or fries.
Potatoes are also high in water content. Similar to other moisture-rich foods, the freezing and thawing process can alter their texture, potentially making them less suitable for certain recipes.

How to Freeze Potatoes

Cook the potatoes
You can either follow a complete potato recipe and freeze the finished dish, or if you’re short on time, simply blanch the potatoes by boiling them until tender.
The cooking time to achieve tenderness varies from a few minutes to around 10 minutes, depending on the size of the potato pieces—so keep an eye on them to avoid overcooking!
