In a large bowl, mix the water, 1 tablespoon of sugar, and yeast, and let it sit for 5 minutes. Afterward, whisk in the eggs, melted butter, and vanilla into the yeast mixture.

In a separate bowl, combine the flour, remaining sugar, and salt. Stir this into the yeast mixture, using a rubber spatula. (The dough will be sticky.) Cover the bowl with plastic wrap and refrigerate until the dough doubles in size, about 1 hour.

On a floured surface, roll the dough into a ¼-inch-thick rectangle. Using a pizza cutter or scissors, cut the dough into 3-inch squares and transfer to a baking sheet lined with parchment paper.

Place a wire rack over another baking sheet and set aside. Heat the oil in a large pot until it reaches 350°F on a deep-fry thermometer. Fry the beignets in batches of 4, flipping them once, for about 90 seconds per side until golden brown. Use a slotted spoon to remove the beignets from the oil, then transfer them to the wire rack.
