1 cup sugar

3 tablespoons fresh ginger, chopped (from a 4-inch piece)

4 cups cold unsweetened white grapefruit juice

750-milliliter bottle of chilled Prosecco

Combine sugar, 1 cup of water, and ginger in a small saucepan. Bring to a boil over medium-high heat, stirring occasionally. Once boiling, reduce the heat to medium and simmer until the sugar dissolves and the mixture reduces to 1 cup, about 4 to 5 minutes.

Strain the mixture through a fine-mesh sieve into a measuring cup or small bowl, discarding the ginger. Chill in the refrigerator for about 40 minutes until cold.

Mix the cooled ginger syrup with the grapefruit juice in a large punch bowl.

For serving, pour about 2/3 cup of the punch into glasses and top with Prosecco. Alternatively, pour a 750-milliliter bottle of chilled Prosecco directly into the punch bowl and serve immediately.
