Allow the salsa to rest and develop its flavors while grilling the sausages. You can select any type of sausage you prefer—Italian, bratwurst, chicken, or even vegan. (If using vegan or pre-cooked sausages, grill them according to the package instructions.) Grill the sausages and serve them in toasted hoagie rolls, spread with a sriracha-infused mayonnaise. Combine the mangoes, bell pepper, onion, jalapeño, lime juice, cilantro, and salt in a medium bowl. In a separate small bowl, mix together the mayonnaise and sriracha.

Preheat the grill to medium heat (350°F to 400°F) on one side. Leave the other side unlit. Lightly oil the grill grates. Place the sausages on the unlit side of the grill. Cover and grill for about 8 minutes until firm. Move the sausages to the lit side of the grill, uncovered, turning occasionally, and grill until charred and cooked through, 5 to 8 minutes. Transfer to a plate. Place the hoagie rolls, split side down, on the lit side of the grill. Grill uncovered for 1 to 2 minutes until toasted and golden.
