Proponents claim it enhances the flavor and creates a creamier texture. If you're skeptical, you're not alone. We consulted registered dietitians to get their take on this unconventional practice.
What’s Behind This Trend?
A viral video shared on Instagram and TikTok by barista Jimmy Johnson (@jimmythebarista) demonstrates his unique method of making egg coffee. He cracks a whole egg into a mixture of coffee grounds and water, boils it in a pan, and strains the final brew into a mug.
As Johnson highlights in his video, egg coffee isn’t a new concept. Dating back to the 1800s, Swedish immigrants introduced this recipe to the U.S., where it became a staple in church gatherings, earning the nickname "church basement coffee."
Johnson explains that the egg serves two key purposes: "The yolk and whites help clarify the coffee, reducing bitterness, while the shell lowers acidity, creating a rich, smooth, and creamy beverage." He describes the flavor as reminiscent of black tea but without the astringent aftertaste.
Is It Safe to Try?
Although the resulting drink may be flavorful, there are risks associated with using raw or undercooked eggs in coffee. Veronica Rouse, RD, warns, "Raw eggs and eggshells can carry harmful bacteria like Salmonella, E. coli, or Campylobacter, which may lead to foodborne illnesses. Additionally, improperly cleaned eggshells or sharp fragments could cause injuries to the digestive system."
Rouse emphasizes that to ensure eggs are fully cooked when attempting this trend, the coffee must reach a temperature of 160°F, which eliminates the risk of Salmonella contamination.
Rouse explains that pasteurized eggs are generally safe for raw consumption. "Pasteurization heats eggs to a level that kills harmful bacteria like Salmonella without cooking the egg," she notes. Look for the term 'pasteurized' on egg cartons to confirm.
"Given the potential risks, I recommend avoiding this trend altogether," advises Rouse. "For a safer option, consider using pasteurized liquid eggs and balancing acidity with milk or cream instead of raw eggs and shells."
While eggs are a great protein source, adding a raw egg directly to your coffee isn’t advisable. There are better ways to boost protein in your drink. "For added protein, I suggest using protein powder or high-protein milk like Fairlife," says Brandi Bonin, RD. "My current favorite is unflavored Vital Protein Collagen Peptides." Alternatively, pair your coffee with a high-protein breakfast for sustained energy throughout the morning.
"My top advice regarding nutrition trends is to consult a registered dietitian before trying them. While some trends are valid, many are misleading and could pose health risks," Bonin concludes.
