This upgraded version of the popular party treat combines the bold flavors of elote, the famous Mexican street corn slathered in mayonnaise and topped with crumbled Cotija cheese. In these baked poppers, sweet corn is blended with cream cheese, Cotija, mayonnaise, and gut-boosting Greek yogurt, creating a creamy, flavorful filling. To add brightness, lime zest, garlic, and scallions are mixed in. If Cotija is hard to find, crumbled feta will work just as well.

8 large jalapeños

1 cup plain whole-milk Greek yogurt

1/2 cup yellow corn kernels, thawed if frozen

1/2 cup crumbled cotija or feta cheese

1/2 cup thinly sliced scallions

1/4 cup cream cheese, softened

1/4 cup mayonnaise

3 cloves garlic, grated on a Microplane

1 1/2 tsp. lime zest

1 tsp kosher salt, divided

Fresh cilantro, finely chopped, for garnish

Instructions

Preheat oven to 400°F. Slice jalapeños in half lengthwise, leaving the stems intact. Carefully remove seeds and membranes using a sharp knife; discard.

In a medium bowl, mix together yogurt, corn, cheese, scallions, cream cheese, mayonnaise, garlic, lime zest, and 3/4 teaspoon salt.

Place jalapeños, cut side up, on a rimmed baking sheet. Sprinkle with the remaining 1/4 teaspoon salt. Stuff each jalapeño with a generous tablespoon of the yogurt mixture, pressing the filling in so it's slightly mounded.

Bake for 18 to 22 minutes, or until golden and set. For a crispier finish, broil for an additional 2 to 3 minutes. Let cool for 10 minutes, then top with fresh cilantro. Serve with ranch dressing on the side, if desired.

For air fryer method: Cook the filled jalapeños at 375°F for 7 to 10 minutes, or until browned. Cook in batches if necessary to avoid overcrowding the basket.
