Photo by Greg DuPreeThe Paloma, thought to have its roots in Mexico, is typically made with tequila and grapefruit soda. Nowadays, many mixologists are substituting mezcal (either works!) and using fresh grapefruit juice, resulting in a less sugary drink. If you choose tequila, a blanco variety is ideal. We enjoy rimming the glass with salt, similar to a margarita, though this is optional.

1 tbsp kosher salt

1/2 tsp chili powder

2 limes

4 oz tequila or mezcal (1/2 cup)

1/2 cup fresh grapefruit juice

2 tsp agave syrup or simple syrup

2 tbsp club soda
Instructions

On a small plate, mix 1 Tbsp. kosher salt with 1/2 tsp. chili powder. Slice one lime into quarters and cut the other lime in half. Rub a lime quarter along the rims of two old-fashioned glasses, then dip the rims in the salt-chili mixture. Fill the glasses halfway with ice.

Squeeze the juice from the remaining lime quarters and halves to yield 2 Tbsp. juice. Pour the juice into a cocktail shaker and add ice halfway up the shaker. Add 4 oz. (1/2 cup) of tequila or mezcal, 1/2 cup of fresh grapefruit juice, and 2 tsp. of agave or simple syrup. Shake until well combined and chilled, then strain into the prepared glasses.

Top each drink with 2 to 4 Tbsp. of club soda and stir gently. Garnish with strips of grapefruit peel for a finishing touch.
