To enhance the ginger’s flavor, gently crush it using the back of a chef’s knife or a rolling pin when preparing the simple syrup.
Ingredients

1/4 cup granulated sugar

2 (1/4-inch-thick) slices fresh ginger (from a 1-inch piece), gently smashed

2 (4-inch) sprigs rosemary, divided

6 Tbsp. (3 oz.) prosecco or other sparkling wine

2 Tbsp. (1 oz.) club soda

1 1/2 tsp. fresh lemon juice (from 1 lemon)
Directions
Prepare the simple syrup:
In a small saucepan, combine sugar, 1/4 cup water, ginger, and 1 rosemary sprig. Heat over medium until boiling, stirring until the sugar dissolves, about 2 minutes. Remove from heat and let it steep for 15 minutes. Discard the rosemary and ginger. Chill the syrup for at least 30 minutes or store it for up to 5 days.
Prepare the cocktail:
Fill a highball glass with ice. Pour in prosecco, club soda, 1 tablespoon of rosemary-ginger syrup, and lemon juice. Stir lightly to mix. Garnish with the remaining rosemary sprig.
Make Ahead: The simple syrup can be prepared up to five days ahead and stored in an airtight container in the refrigerator. Use any extra syrup to enhance sparkling water for a delightful non-alcoholic beverage.
