Tip: For the best flavor, be sure to brush the rosemary honey on while both the prosciutto and honey are still warm.

8 oz. thinly sliced prosciutto (approximately 20 slices)

2 sprigs fresh rosemary

1/4 cup honey

Preheat your oven to 375°F and line two large baking sheets with parchment paper. Arrange the prosciutto slices in a single layer on the sheets. Bake for 12 to 15 minutes, in batches if necessary, until the prosciutto becomes crispy.

While the prosciutto bakes, place rosemary sprigs in a small skillet and pour in the honey. Bring it to a boil over medium heat, stirring gently to ensure the rosemary infuses into the honey. Once it’s fragrant, about 1 minute, reduce the heat to low and simmer. Discard the rosemary after use.

Take the prosciutto out of the oven and immediately brush it lightly with the warm honey. If the honey thickens, warm it over low heat again. (You can store leftover honey in the fridge for up to 3 weeks.) Let the prosciutto cool completely on the baking sheets for about 10 minutes.
