1 cup (6 oz) pitted green olives (preferably Castelvetrano)

2 large sprigs rosemary

8 lamb chops (loin or rib)

4 Persian cucumbers
Instructions

Begin by bringing 2 cups of water to a boil. Position an oven rack close to the broiler, then turn it on. Line a baking sheet with aluminum foil. Add bulgur to the water (boiling or not), followed by the juice of the lemon and 1 teaspoon of salt. Cover the pot. Once the water reaches a boil, reduce the heat and let it simmer.

Finely chop the olives and rosemary. Add about two-thirds of the olives and half of the rosemary to the bulgur mixture.

In a separate bowl, combine the remaining rosemary, olives, mayonnaise, and the second teaspoon of salt. Spread the mixture over both sides of the lamb chops, then place them on the baking sheet. Broil the chops for 3-4 minutes, flip them, and broil for an additional 3-4 minutes.

While the bulgur and chops are cooking, smash the cucumbers with the back of a knife, then chop them roughly. One minute before the chops are done, fold the cucumbers into the bulgur. Serve alongside the lamb chops.
