Salsa verde, meaning "green sauce" in Spanish, is usually made with tomatillos, cilantro, and green chiles. After searing the chicken thighs, simmer them in the tangy, mild sauce until they are fork-tender. For the tortillas, you can wrap a stack in foil and heat them in the oven, or char them over a medium-low flame on a gas stove, flipping them with tongs until they have crispy spots. Top the tacos with finely chopped onion, cilantro, and crumbled cotija cheese. Feta is also a great substitute, or you can add a dollop of sour cream.

1 1/4 lb boneless, skinless chicken thighs

16 oz salsa verde

12 corn tortillas

1 avocado, sliced

1/2 cup finely chopped red onion

1/2 cup fresh cilantro, chopped

2 oz crumbled cotija cheese

Lime wedges, for garnish

Season the chicken with salt and pepper. Heat oil in a large pot or Dutch oven over medium heat until shimmering. Add the chicken and cook until golden brown, about 3 minutes on each side. Pour in salsa verde, lower the heat to medium-low, cover partially, and cook, stirring occasionally and flipping the chicken halfway through, until the internal temperature of the thickest part of a chicken thigh reaches 165°F, about 6 to 8 minutes. Remove from heat and let it rest for 5 minutes.

Transfer the chicken to a large bowl and shred it with two forks. Return the shredded chicken to the pot and toss it in the salsa verde until well-coated.

Heat the tortillas in the microwave, over a gas flame, or in a dry skillet. Fill the tortillas with the shredded chicken, avocado, onion, cilantro, and cheese. Serve with lime wedges on the side, if preferred.
