Hailing from Pops for Champagne, a renowned Chicago staple for over 40 years, this bourbon-based cocktail features pineapple liqueur, lemon, and a speedy homemade honey syrup that adds depth and complements the bourbon’s rich caramel flavors.
The cocktail is shaken until perfectly chilled, poured into a rocks glass, and crowned with Prosecco. The real magic happens with the addition of a pinch of edible glitter, which makes the drink sparkle like gold, certain to inspire 'oohs' and 'aah's. However, if you don’t have edible glitter on hand, don’t let that stop you from enjoying this delicious creation.
Tip
For a beautiful lemon peel garnish, aim to remove the least amount of pith possible. Use a vegetable peeler to carve a wide strip from the lemon. A Y-peeler works wonderfully for this task.
Ingredients

1 oz. (2 Tbsp.) bourbon

3/4 oz. (1 1/2 Tbsp.) pineapple liqueur (like Fruitful)

3/4 oz. (1 1/2 Tbsp.) fresh lemon juice (from 1 lemon), plus lemon peel for garnish

1 Tbsp honey syrup (refer to the recipe below)

Edible glitter (optional)

1 to 2 oz Prosecco
Instructions
Combine bourbon, pineapple liqueur, lemon juice, and honey syrup in an ice-filled shaker. Shake until well-chilled and thoroughly mixed.
Add a pinch or two of edible glitter (optional) to a rocks glass. Pour the shaker’s contents, including the ice, into the glass. Finish by topping with Prosecco and garnishing with a lemon peel.
Honey Syrup
In a small pot over medium heat, stir together 1/4 cup of honey and 2 Tbsp. of water. Stir until fully combined, making sure not to let it simmer. This makes about 1/4 cup of syrup. Keep it refrigerated for up to 7 days.
