12 oz mafalde or fettuccine pasta

1/2 cup unsalted butter

1/2 cup sun-dried tomatoes in oil, drained and finely chopped

1 tbsp gochujang

2 tsp smoked paprika

1/2 tsp crushed red pepper

1 tsp kosher salt

3/4 tsp ground black pepper

2 tbsp olive oil

1 lb peeled, deveined extra-large raw shrimp

Grated parmesan cheese, for serving
Cooking Instructions

Boil a large pot of salted water. Cook the pasta according to the package instructions, reserving 1/2 cup of the pasta water. Drain the pasta and return it to the pot.

In a separate bowl, mix the butter, sun-dried tomatoes, gochujang (if using), paprika, crushed red pepper, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper.

Heat the olive oil in a large skillet over medium-high heat. Add the shrimp, the remaining 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook until the shrimp are lightly browned and cooked through, about 4 minutes. Add 1/4 cup of the reserved pasta water, and cook while stirring until the liquid mostly evaporates, 1 to 2 minutes.

Toss the butter mixture and shrimp with the drained pasta. Add the remaining 1/4 cup of reserved pasta water to achieve the desired sauce consistency. Finish with black pepper and grated cheese.
