Guests will adore the blend of pecans, walnuts, almonds, and cashews, enhanced by the aromatic mix of cinnamon, cloves, fennel, star anise, and Szechuan pepper found in Chinese five-spice. A hint of cayenne adds warmth, balanced by the sweetness of maple and the fragrance of rosemary. Pair these with white or red wine, champagne, or cocktails for a delightful low-effort party snack. And if by chance there are leftovers (unlikely), they make a fantastic salad topping.
Pure maple syrup is essential for this recipe. Avoid imitation syrups made with corn syrup and artificial flavors, as they lack the natural caramel and vanilla notes that pure maple syrup provides, affecting both taste and texture.

1/2 cup pure maple syrup

1 Tbsp. finely chopped fresh rosemary

1/2 tsp. Chinese 5 spice

3 cups mixed unsalted nuts (such as almonds, cashews, walnuts, and pecans)

3/4 tsp. kosher salt
Directions
Preheat oven and prepare baking sheet:
Set the oven to 375°F and line a large rimmed baking sheet with parchment paper.
Season the nuts:
In a medium bowl, mix maple syrup, rosemary, Chinese five spice, cayenne, and a few grinds of pepper. Add the nuts and toss until evenly coated.
Spread the nuts on a baking sheet:
Transfer the coated nuts and maple syrup mixture onto the prepared baking sheet, spreading them into a single, even layer.
Bake nuts:
Bake the nuts for 10 minutes. After sprinkling with salt, stir them and spread into an even layer. Continue baking until the nuts turn a deep golden color and the maple syrup mixture becomes bubbly, thickened, and clings to the nuts, about 10 to 12 minutes, stirring twice more during baking. (Note: The nuts will crisp further as they cool.) Allow them to cool completely, approximately 15 minutes, before serving.
