Blend dates, almond flour, and tahini in a food processor until smooth, about 1 minute. Shape the mixture into 1-tablespoon-sized balls and place them on a parchment-lined baking sheet. Chill in the refrigerator until ready to coat in chocolate.

In a microwave-safe bowl, combine the chocolate and coconut oil. Microwave on high in 30-second bursts, stirring in between, until fully melted, about 90 seconds. Allow to cool to room temperature, about 15 minutes.

Use a fork to dip each truffle into the melted chocolate. Gently wiggle the fork to remove excess chocolate, then return the truffle to the parchment paper. Repeat with the remaining truffles.
