½ cup granulated sugar

2 sprigs of tarragon, plus extra for garnish

1 cup (8 oz.) cognac

½ cup freshly squeezed lemon juice (from approximately 4 lemons)

24 ounces dry sparkling wine (from a 750-ml bottle)
Instructions

Prepare the simple syrup: In a small saucepan, bring sugar and ½ cup water to a boil over high heat. Stir often until the sugar dissolves, about 1 minute. Remove from heat and stir in tarragon sprigs. Let it cool to room temperature for about 30 minutes before discarding the tarragon. (The syrup can be stored in the refrigerator for up to a week.)

In a large cocktail shaker filled with ice (or in batches), combine cognac, lemon juice, and ½ cup cooled simple syrup. Secure the lid and shake well until chilled. Fill 8 rocks glasses with ice, pour the mixture evenly into the glasses, and top each one with 3 ounces of sparkling wine. Garnish with a sprig of tarragon.
