
A group of international graduate students from Sweden's Lund University has devised a strategy to address two critical food issues: minimizing fresh produce waste and delivering nutritious food during emergencies.
Their innovation, FoPo Food Powder, is a freeze-dried fruit and vegetable product with a shelf life extended by two years. They source overripe or damaged produce from farms and wholesalers—joking to Mashable that they're "elevating dumpster diving." The freeze-drying method preserves most nutrients, and the powder can enhance meals like yogurt, cereal, baked goods, or soups with a fruit or vegetable boost.

Compact, nutrient-rich food products that are simple to transport and distribute are crucial during crises like tsunamis or earthquakes.
