As the salmon bakes, the flavored butter soaks into the fish, becoming subtly sweet and tangy as the flavors intensify. Pair it with roasted broccolini, perfectly cheesy and charred, and you’ve got a dinner that’s worth writing down.
This sun-dried tomato butter is so delicious, you’ll want to use it on everything. Try it in pasta sauces for added depth, spread on chicken, or toss it with your favorite roasted veggies.

1 lb Broccolini, trimmed and thick stalks halved lengthwise

1 1/2 Tbsp olive oil

3/4 tsp kosher salt, divided

3 Tbsp unsalted butter, softened

2 Tbsp drained and finely chopped sun-dried tomatoes

1/2 tsp dried Italian seasoning

1 clove garlic, grated (about 1/2 tsp)

4 6-oz skin-on salmon fillets

2/3 cup grated Parmesan cheese (roughly 1 oz.)

Lemon wedges, for serving
Cooking Instructions

Preheat your oven to 425°F. On a large rimmed baking sheet lined with parchment paper, toss Broccolini, olive oil, and 1/2 teaspoon salt. Bake for 7 minutes.

While that’s baking, combine butter, sun-dried tomatoes, Italian seasoning, garlic, and the remaining 1/4 teaspoon salt in a small bowl. Spread this butter mixture over the flesh side of the salmon fillets.

After 7 minutes, take the baking sheet out of the oven. Move the Broccolini to the outer edges, and place the salmon in the center, skin side down. Roast for 10 to 14 minutes, until the salmon is just opaque in the center.

Remove the salmon from the baking sheet and place on plates. Toss the Broccolini with Parmesan cheese, and squeeze lemon juice over the top. Serve the salmon with the Broccolini and extra lemon wedges on the side.
