Ingredient Substitution: Prosciutto can be a great alternative to serrano ham. Both are salted, but prosciutto is less salty, cured in a more humid environment, and dried for a shorter time, giving it a sweeter, fattier texture. Instructions

In a small bowl, whisk together vinegar, mustard, pepper, and 3/4 teaspoon of salt until blended. Slowly pour in the olive oil in a thin, steady stream while continuing to whisk until the mixture is emulsified.

On individual plates, arrange the tomatoes and peaches. Sprinkle with the remaining 1/4 teaspoon of salt. Layer on the arugula, ham, cheese, and almonds. Drizzle the vinaigrette over the top and finish by lightly dusting with black pepper.
