Rich, oil-packed tuna fillets are combined with shallots, celery, cornichons, capers, and fresh herbs. The oil from the tuna is used to dress the salad, paired with a bit of mayonnaise. Creamy avocado slices top the mix, served on toasted rye or sourdough bread (your choice!) for extra richness. Dill and parsley are the perfect herbs to enhance this tuna sandwich, but if you can get fresh chervil, it's worth using.
For a more substantial tartine, try adding thinly sliced radishes, hard-boiled eggs, or microgreens. During the right season, swap the avocado with fresh tomatoes.

2 6.7-oz. jars of tuna fillets in olive oil

2 stalks of celery, thinly sliced (about 1 cup)

1 shallot, thinly sliced (about 1/2 cup)

1/4 cup chopped fresh tender herbs (such as dill and flat-leaf parsley), plus extra for garnish

1/4 cup mayonnaise

8 cornichons, finely chopped (about 1/4 cup), plus 4 tsp of brine

2 tablespoons drained nonpareil capers, chopped

1/4 teaspoon kosher salt

4 1/2-inch-thick slices of crusty rye or sourdough bread

2 medium avocados, thinly sliced
How to Make It

Preheat the broiler, placing the oven rack about 6 inches from the heat. Drain the tuna, reserving 2 tablespoons of oil. Using a fork, gently break the tuna into large pieces in a medium bowl.

Add the celery, shallot, herbs, mayonnaise, cornichons with brine, capers, reserved tuna oil, and 1/8 teaspoon of salt to the tuna. Stir gently to combine.

Arrange the bread slices in a single layer on a baking sheet. Broil until golden and crispy on top, about 2 minutes. Flip the slices over and broil the other side for an additional 1 to 2 minutes.

Top the toasted bread with sliced avocado and sprinkle with the remaining 1/8 teaspoon of salt. Spoon the tuna mixture over the toasts and garnish with fresh herbs.
