It’s quite simple. Parchment paper can withstand heat, whereas wax paper cannot. Parchment paper is a robust, kitchen-specific product treated with silicone, giving it resistance to both grease and moisture. It’s ideal for cake molds or wrapping fish (but it’s best not to reuse it for those tasks). Parchment paper is oven-safe.
Wax paper also features a non-stick surface, but it’s not designed to be exposed to heat. The wax coating could melt. It’s better used for covering countertops for easy cleanup or rolling out dough, as well as tenderizing chicken breasts.
While parchment paper tends to be pricier, it offers far greater versatility. Wax paper should be your choice only if you're anticipating a mess and want to easily dispose of it. However, be cautious not to confuse the two—using wax paper near heat might require an extra item in your kitchen: a fire extinguisher.
