The speed difference has nothing to do with geography and everything to do with technology, specifically induction cooking. This type of stove, uncommon in North America but frequently used in European kitchens and restaurants, works differently than electric or gas cooktops. Induction uses electromagnetism to heat cookware directly, which makes cooking much faster.
Speed is just one of the many benefits. So, if induction technology is so amazing, why isn't it more widespread? The answer is mainly cost. However, as people invest more in their kitchens and the prices of induction cooktops continue to fall, the U.S. is starting to take notice. An induction cooktop is just as responsive to temperature adjustments as a gas cooktop, but with the added advantage of more settings. Induction models provide finer control over heat, offering more temperature levels and better performance at very low settings. This makes delicate tasks like cooking sauces or simply keeping food warm far easier than with a gas flame, which can struggle at low temperatures.

If your primary goal with a cooktop is to get dinner ready quickly and safely, then it's obvious that an easier, less labor-intensive cleanup is a big bonus. Since an induction cooktop rarely gets extremely hot, food doesn’t burn onto the surface. A splatter, spill, or pasta-sauce pop simply requires a quick swipe with a sponge instead of an extensive scrub.
The Investment of an Induction Burner
Even with its easy cleanup—plus speed, energy efficiency, safety, and precise control—induction cooktops might still be out of reach for some due to their price. They're still much pricier than gas, electric, or even cast iron cooktops because of their copper coil and electromagnetic design. Also, you might need to invest in new cookware if your current set isn't induction-compatible, making it a significant investment.
However, if you're doing one of those increasingly popular $30,000 kitchen renovations, or even a $5,000 appliance upgrade, an induction cooktop should definitely be on your "consider" list—especially if your stove is mainly used for basic tasks like boiling water. While gas and electric cooktops might come with a lower price tag, they're often more complicated and expensive to operate compared to magnetic cookware.
