
Experienced bakers know that baking bread is more about science than art. It's important to follow recipes precisely, as swapping ingredients on a whim can lead to undesirable outcomes. Yeast, a key component in leavened bread, can be tricky to shop for. Instant and active dry yeast are often found side by side in the baking aisle, and while they can be used interchangeably in most cases, they have distinct differences.
Yeast consists of single-celled organisms that create the gases responsible for making dough rise. Whether you choose active dry or instant yeast for your next baking project, you'll be working with live microorganisms.
Active dry yeast is commonly sold in packets with a granular texture. As the name implies, it needs to be activated in warm water before being added to other ingredients. By letting the yeast sit in warm water for 10 minutes, you can confirm it's still viable when bubbles begin to form on the surface. If no bubbles appear, the packet may be expired or ineffective.
Instant yeast is also dormant, but unlike other yeasts, it doesn’t need to be proofed before use. Its finer granules are designed to dissolve quickly when mixed into bread dough. However, you can’t check if the yeast is active through this method. If you’re uncertain how long that packet of instant yeast has been in your pantry, it’s a good idea to proof it in warm water just to be sure.
While many bread recipes call for active dry yeast, there’s no harm in replacing it with instant yeast in a 1:1 ratio. In fact, King Arthur recommends using instant yeast every time, regardless of the recipe. Not only is it cheaper, but it rises faster and continues producing gases for a longer period.
If you only have active dry yeast at home, you can use it in the same way as instant yeast. King Arthur tested dough made with un-proofed active dry yeast and found no significant difference compared to dough made with yeast that had been activated in water. There are many ways to mess up homemade bread, but using the wrong yeast in the wrong way isn’t usually one of them.
