1. Fried Eggs with Straw Mushrooms
Ingredients:
- 3 eggs
- 50g straw mushrooms
- 50g pork belly
- 4 cloves of garlic
- 2 shallots
- 1/2 onion
- 5g coriander leaves
Instructions:
- Wash the straw mushrooms, remove any dirt from the roots, and slice them thinly. Dice the onion. Peel and chop the shallots and garlic finely. Clean the pork belly with salt and cut into small pieces, then blend in a food processor. Wash the coriander leaves and set aside to drain.
- Heat a pan, add a bit of oil, and sauté the shallots and garlic until fragrant. Then, add the diced onion and stir-fry. Add the minced pork and cook until the pork turns light brown. Add the straw mushrooms and stir-fry well.
- Season with 1/2 teaspoon of MSG, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of sugar, and a little water. Stir until the pork and mushrooms are fully cooked, then add 1 tablespoon of fish sauce and stir in a little pepper. Turn off the heat.
- Crack 3 eggs into a bowl, beat them until smooth. Add the cooked pork and mushroom mixture, then mix well. Stir in the chopped coriander leaves for added color and flavor.
- Heat a pan with oil and place a round mold in the center. Pour the egg mixture into the mold and cook on low heat with the lid on.
- When the bottom is golden and dry, flip the fried eggs using chopsticks and a spatula. Fry for a little longer, then remove from the pan and serve.


2. Fried Egg with Fish Sauce
Ingredients:
- 5 chicken eggs
- 4 tablespoons of fish sauce
- 10 grams of green onions
- 1/2 chili pepper
- 4 tablespoons of sugar
- 1/2 teaspoon of salt
- 1/2 teaspoon of five-spice powder
- 1/2 teaspoon of ground pepper
- 2 tablespoons of annatto oil
Directions:
- Clean the ingredients. Mince garlic and chili pepper, and chop the green onions. Crack the eggs into a bowl, then add 1/2 teaspoon of salt and 1/2 teaspoon of ground pepper.
- Whisk the eggs until smooth and frothy. It's important to whisk evenly until bubbles form, as this will make the eggs soft and smooth when cooked.
- Heat a pan on low heat, add 1 tablespoon of cooking oil, and once hot, pour in the eggs.

- In a bowl, mix 4 tablespoons of fish sauce, 4 tablespoons of sugar, 1/2 teaspoon of five-spice powder, a pinch of ground pepper, and 1 tablespoon of chili sauce. Stir the mixture well.
- Heat the pan on low heat, add 2 tablespoons of annatto oil, sauté minced garlic until golden and fragrant, then pour in the sauce mixture and cook for about 2 minutes.
- Finally, add the fried eggs into the sauce, sprinkle with more green onions and chili, and cook for another 3 minutes before serving.


3. Fried Egg with Kimchi
Ingredients:
- 4 eggs
- 1 onion
- 1 carrot
- 60 grams of spinach
- 60 grams of kimchi
- 1 tablespoon of chili powder
- 1 tablespoon of black sesame seeds
- 10 grams of seasonings (salt/sugar/oil)
- 50 ml of water
Instructions:
- Wash and peel all ingredients.
- Chop the onion, carrot, and ham into small cubes, and finely chop the spinach and kimchi.
- In a bowl, crack 4 eggs and add a pinch of salt, 50 ml of water, onion, carrot, spinach, and ham, then stir the mixture with chopsticks or an egg whisker.
- In another bowl, combine the chopped kimchi with 1 tablespoon of oil, 1 tablespoon of sugar, 1 tablespoon of chili powder, and 1 tablespoon of black sesame seeds, then mix everything well.
- Heat 1 tablespoon of oil in a pan and pour the egg mixture in to fry over medium heat. Once the egg is cooked but still slightly wet on top, add the kimchi mixture and cook for another 2 minutes. Turn off the heat and serve.


4. Sponge-Fried Egg
Ingredients:
- 3 eggs
- 1/2 teaspoon of salt
- 1/2 tablespoon of sugar
- 5 grams of butter
Instructions:
- First, separate the egg whites and yolks into two separate bowls. Be careful not to let any yolk mix with the whites, as this will prevent the whites from fluffing up properly.
- Next, add 1/2 tablespoon of salt to the egg yolks and whisk them until well mixed.
- Then, add 1/2 tablespoon of sugar to the egg whites and use a whisk or electric mixer to beat the mixture until it forms stiff peaks. Stop beating once the peaks stand firm.
- Be careful not to over-beat; once stiff peaks form, stop to avoid the egg whites separating into liquid.
- Now, gradually fold the egg yolks into the beaten egg whites, gently mixing from the bottom up to avoid deflating the mixture.
- Be sure not to stir too vigorously, as this will cause the mixture to collapse and release water.
- Place a pan on the stove and set the heat to low. Once the pan is hot, add 5 grams of butter or cooking oil. Pour in the egg mixture and gently spread it out for an even layer.
- Cover the pan and cook over low heat for about 5 minutes until the eggs are cooked.
- After 5 minutes, when the bottom is golden brown, carefully fold the egg like a pancake, hold for 10 seconds, then serve and enjoy!


5. Fried Egg with Potatoes and Cabbage
Ingredients:
- 2 eggs
- 250g cabbage
- 150g potatoes
- Salt to taste
- Pepper to taste
- Cooking oil
Instructions:
- Wash the cabbage thoroughly and cut it into thick strips about one-third of the length of your finger.
- Peel and wash the potatoes, then grate them finely.

6. Fried Egg with Vegetables
Ingredients:
- 3 eggs (duck or chicken)
- 50g peas
- 35g enoki mushrooms
- 2 slices of bacon
- 1/4 carrot, sweet corn, shallots, spring onions
- Seasoning, cooking oil, fish sauce, pepper, etc.
- Tools: pot, frying pan
Preparation:
- Boil water in a pot to cook the peas and sweet corn until tender, then drain and set aside.
- Wash the shallots, spring onions, and carrot.
- Chop everything finely.
- Trim the ends of the enoki mushrooms, rinse them, soak in salt water, and cut into small pieces.
- Crack the eggs into a bowl, add a pinch of salt, and beat them together.
- Add the vegetables, bacon, and enoki mushrooms into the eggs, mix everything together, and season to taste.
Cooking the Fried Egg with Vegetables:

7. Fried Egg with Cheese

- Crack the eggs into a bowl, add salt, spring onions, shallots, and black sesame. Stir to combine.

- 200g tomatoes (100g large tomatoes and 100g cherry tomatoes)

- 4 eggs (chicken or duck eggs)
- 10g shallots
- 20g cilantro
- 50ml water
- 10ml cooking oil
- 10ml annatto oil
- 10g seasoning (fish sauce/sugar/seasoning powder/pepper/chili sauce)
Instructions:
- Wash the tomatoes, onion, and cilantro. For large tomatoes, remove the seeds and finely chop or dice them. Dice the onion, finely chop the cilantro and shallots.
- Crack the eggs into a bowl and add seasoning, including a pinch of seasoning powder, pepper, sugar, fish sauce, and some chopped onion and cilantro. Use chopsticks or a whisk to mix everything together.
- Heat 10ml of cooking oil in a pan, sauté 5g of shallots and some onion until fragrant. Then pour in the egg mixture and fry until the egg is slightly set (the surface should still be wet). Turn off the heat.
- In the same pan, add 10ml of annatto oil, sauté 5g of shallots and the remaining onion until fragrant. Add the chopped tomatoes, a bit of sugar, seasoning powder, fish sauce, and chili sauce, stir-fry for 1 minute, then add 50ml of water, cover, and simmer on low heat for 5 minutes.
- Finally, add the cherry tomatoes and pre-fried eggs into the tomato sauce, cover, and cook for another 3 minutes. Garnish with cilantro and pepper to enhance the flavor. Your dish is ready to enjoy!


9. Fried Egg with Minced Meat
Ingredients:
- 2 eggs (duck eggs can be used as an alternative)
- 50g ground pork
- 3 stalks of green onion
- 1 teaspoon fish sauce
- 2 teaspoons cooking oil
- Common seasoning to taste (sugar/msg/seasoning powder/pepper)
Instructions:
- Wash the green onions and remove the roots. Separate the leaves and bulbs, then chop them into small pieces.
- Crack the eggs into a bowl, add 1 teaspoon of fish sauce, 1/2 teaspoon of MSG, and the chopped green onion leaves, then whisk everything together until well combined.
- In a separate bowl, mix the minced pork with 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of pepper, and the chopped green onion bulbs. Let the mixture marinate for 10 minutes for the flavors to blend.
- Heat 1 teaspoon of oil in a pan over medium heat, then sauté the marinated minced pork for about 2 minutes until just cooked through. Turn off the heat and transfer the cooked pork to the egg mixture, stirring until well combined.

10. Fried Egg Roll with Sausages
Ingredients:
- 5 eggs
- 250g sausages
- 1 carrot
- 4 stalks of green onions
- 6 slices of cheese
- 1/2 teaspoon salt
- 1 tablespoon cooking oil
Instructions:
- Crack the 5 eggs into a bowl and add 1/2 teaspoon of salt. Whisk the eggs thoroughly. Then, pass the mixture through a sieve to make it smoother.
- Peel the carrot and rinse it under clean water. Then, finely chop it into small pieces.
- Remove the roots from the green onions, wash them, and chop them into small pieces. For the sausages, simply remove the packaging and set them aside.
- Add the chopped carrot and green onion into the bowl of whisked eggs and mix everything together.
- Place a pan on medium heat and add 1 tablespoon of cooking oil. Once the oil is hot, pour in half of the egg mixture. After about 30 seconds, place 6 slices of cheese in the center of the egg and lay the sausages on top.
- Roll up the egg around the sausage and cheese, pushing it to one side of the pan. Pour in the remaining egg mixture and wait until the surface starts to set. Roll the egg over the new layer, making a second roll. Once the eggs are golden, turn off the heat.
