- Place the basin with papaya into the refrigerator and marinate for 4 - 5 hours to allow the sugar to dissolve and infuse into the papaya.
Making the papaya jam:
- After marinating, remove the papaya and pour the syrup into a large pan.
- Heat the syrup over high heat until it boils, then add the papaya and stir briefly. At this point, the syrup will start to bubble lightly.
- Once the syrup starts boiling strongly, lower the heat to medium, add the pandan leaves and blanch them for about 10 minutes to infuse a fragrant aroma into the jam.
- Continue to cook the papaya, stirring until the syrup thickens and the edges of the pan have crystallized sugar. Lower the heat as much as possible and stir continuously.
