Sơ chế tôm và thịt:
- Tôm bạn cắt phần râu tôm và gai trên đầu tôm, lấy phần phân tôm trên đầu, chỉ tôm và làm sạch tôm rồi để nguyên con dùng dao khứa 1 đường trên lưng tôm để món ăn thêm đẹp mắt.
- Thịt heo sau khi mua về bạn đem chà sạch với muối hột, rửa lại với nước, rồi cho ra rổ để ráo nước. Cắt thịt thành từng miếng vừa ăn.
Sơ chế các nguyên liệu khác:
- Hành tím, tỏi bạn bỏ vỏ rồi băm nhỏ, ớt sừng cắt lát, hành lá cắt khúc, hành tây cắt múi cau rồi cắt khúc vừa ăn.
- Thơm khi mua bạn nhờ người bán cắt mắt hoặc tự cắt mắt tại nhà, sau đó bổ đôi và cắt miếng vừa ăn.
Xào thịt và tôm:
