1. Stir-Fried Noodles with Eggs
Ingredients:
- 150g noodles
- 2 eggs
- 1 lemon
- 1/2 carrot
- 1/2 daikon radish
- A bunch of green onions
- 3 shallots
- Seasonings: cooking oil, pepper, sugar, oyster sauce, fish sauce
Instructions:
- Prepare the ingredients: First, boil water in a pot and cook the noodles for about 20 minutes. Once the noodles are soft, rinse them under cold water multiple times to stop them from expanding and sticking together. Let the noodles drain. Optionally, add a bit of oil to prevent sticking, and season with a pinch of salt to enhance the flavor. Next, peel and clean the carrot and daikon radish, then shred them into thin strips. In a bowl, mix 1 teaspoon of sugar and the juice of half a lemon with some water, then soak the shredded vegetables in the mixture. Clean the green onions by removing the wilted leaves, then chop them finely. Peel and finely chop the shallots.
- Stir-fry the noodles with eggs: Heat a pan with some cooking oil and sauté the chopped shallots until fragrant, then add the noodles and stir-fry until they turn golden. Crack the eggs into a bowl, beat them with a pinch of salt and ground pepper. Pour the beaten eggs into the pan with the noodles, cooking them without stirring to let them naturally form a bond. Sprinkle chopped green onions over the mixture and fry both sides until golden brown. Remember to cook on low heat so the eggs are fully cooked and the noodles stay crispy without burning. Finally, plate the dish and serve with the pickled vegetables you prepared earlier, such as the carrot and daikon radish.

2. Stir-fried Noodles with Minced Pork
Ingredients:
- 250g noodles
- 2 ripe tomatoes
- 1/2 onion
- 250g minced pork
- 3 stalks of green onions
- Minced garlic
- Seasoning: pepper, fish sauce, sugar, cooking oil, ketchup.
Instructions:
- Prepare the ingredients: Boil a pot of water to cook the noodles, adding ¼ teaspoon of salt and a bit of cooking oil. Once the noodles are just cooked, transfer them to a bowl of cold water (ice is better), and then drain them well. This step prevents the noodles from sticking together. Cut the green onions in half; chop one part finely and slice the other part. Wash and dice the tomatoes and onion. Marinate the minced pork with a little pepper, salt, and minced garlic.
- Stir-fry the noodles with minced pork: Heat a pan and sauté the garlic until fragrant, then add the onions. Next, add the minced pork, stir-frying it evenly. Season with 1 teaspoon of seasoning powder and a bit of ground pepper. After 5 minutes, when the meat is cooked, remove it from the pan. Pour 1 tablespoon of oil into the pan, heat it up, and add the tomatoes. Stir-fry the tomatoes until softened, then season with 1 tablespoon of sugar, 1 tablespoon of fish sauce, and ½ teaspoon of seasoning powder. Once the tomatoes are cooked, add the stir-fried pork and briefly stir. Then, add the noodles. Stir-fry the noodles for about 3 minutes. If the noodles seem dry, you can add a little water. Once done, toss in the green onions, turn off the heat, plate the dish, and sprinkle more green onions on top. Now, it's ready to serve!
