- Step 1: Wash the ribs thoroughly and blanch them in warm water to remove any odor. Then, cut them into bite-sized pieces and set aside. Crack the egg into a bowl and whisk it, adding a bit of cornstarch and mixing it well. Wash and shred the wild betel leaves.
- Step 2: Keep the lemongrass stalks whole, slice the shallot, and peel and slice the ginger. Add the egg mixture, cornstarch, MSG, seasoning powder, pepper, sugar, and salt to the ribs, and mix well. Let it marinate for 15–20 minutes for the flavors to infuse.
- Step 3: Heat a pan and add a bit of oil. Once the oil is hot, add the ribs and fry until they are golden on all sides. Remove the ribs and set them aside. In the same pan, sauté the ginger, betel leaves, lemongrass, and shallot until crispy and fragrant, then transfer them to a plate.
- Step 4: Place the pan back on the stove, add salt and roast it, then add the fried ribs and the sautéed ingredients. Stir well on high heat for 1–2 minutes to finish.

- 1 bulb of garlic
- Good quality fish sauce
- Seasonings: Sugar, chili powder, black pepper, vinegar
Instructions:
- Step 1: Clean the ribs, cut into bite-sized pieces, and blanch them briefly in boiling water. Afterward, rinse and drain the ribs. Heat a little oil in a pan and lightly fry the ribs on both sides until they are slightly golden, then turn off the heat.
- Step 2: Prepare the fish sauce mix by combining 3 tablespoons of water, 2 tablespoons of fish sauce, 2 teaspoons of sugar, 1 teaspoon of chili powder, ½ teaspoon of black pepper, and 1 tablespoon of vinegar. Add the lightly fried ribs to this mixture and let them marinate for 1-2 hours to absorb the flavors.
- Step 3: Heat some more oil in a pan, then fry the marinated ribs on both sides until they are golden and crispy. Once done, transfer the ribs to a plate lined with paper towels to absorb the excess oil.

15. Pepper Braised Ribs
Ingredients:
- 400g pork ribs
- 1 shallot
- 1 garlic bulb
- A pinch of whole black peppercorns
- Seasonings: sugar, fish sauce, seasoning powder, broth powder, soy sauce
Instructions:
- Step 1: Cut the ribs into bite-sized pieces, wash thoroughly, and blanch them briefly. Discard the blanching water and rinse again. Marinate the ribs with a little seasoning powder, sugar, broth powder, soy sauce, and fish sauce. Mix well, cover, and refrigerate for a few hours to allow the ribs to absorb the flavors.
- Step 2: Mince the shallot and garlic, and keep the peppercorns whole (or use ground pepper if you prefer it spicy). Sauté the shallot and garlic until fragrant, then add the ribs and pepper, stir-frying briefly.
- Step 3: In a separate pan, caramelize a little sugar until it turns amber, then add water. Boil the water and pour the caramelized sugar into the rib pot.

Ingredients:
- 1kg pork ribs (for this dish, choose ribs with a good amount of cartilage and lean meat)
- 5 cloves of garlic
- 1 red chili pepper
- A few sprigs of fresh coriander
- Seasonings: soy sauce, sesame oil, white wine, cornstarch, salt, chili sauce, ground pepper
Instructions:
- Step 1: Clean the pork ribs, drain, and cut them into bite-sized pieces. Place them in a large bowl. Peel and mince the garlic, remove the seeds from the chili, and chop it finely.
- Step 2: Marinate the ribs with 1 tablespoon sesame oil, 1 teaspoon soy sauce, 1 tablespoon cornstarch, 1 teaspoon white wine, and 1 teaspoon chili sauce for at least 1 hour, or longer if possible. Note: Make sure the ribs are dry before marinating so that they absorb the flavors better.
- Step 3: After the marinating time, stir the ribs again and place them in the steamer. Bring the steamer to a boil, then lower the heat and steam for about 30 minutes or until the ribs are fully cooked.
- Step 4: Remove the ribs from the steamer, garnish with the minced garlic and chili on top, and add a few fresh coriander leaves for decoration. Optionally, sprinkle with a little ground pepper for extra fragrance!

- 1 large sweet corn cob

- Step 4: Sauté the remaining garlic and onion in oil, then add the ribs and stir-fry until they are golden brown. Remove the ribs and set aside.
- Step 5: Use the broth from cooking the ribs, add 1 tablespoon soy sauce, 2 tablespoons sugar, 1 tablespoon apple cider vinegar, and 2 tablespoons water, simmer gently.
