1. Hot Food
Storing hot food in the fridge can release heat, temporarily raising the temperature inside the refrigerator. This reduces the effectiveness of food preservation and wastes unnecessary energy. Hot food can also warp plastic containers, releasing harmful chemicals that can affect your health. Instead, it’s best to allow food to cool down outside before refrigerating it.


2. Chocolate
Foods stored in the fridge often develop condensation on their surfaces, causing the loss of aroma and creating a breeding ground for bacteria.
If you want to store chocolate, place it in a vacuum-sealed bag and store it in the freezer. When you're ready to eat it, let the chocolate return to room temperature for the best experience.


3. Fish
You should avoid storing fish in the fridge for too long, typically no more than a day. The temperature in a standard freezer is usually -15°C, but most seafood requires storage at -30°C. If fish is kept too long in the fridge, its moisture will gradually evaporate, leading to a mushy texture, a bad smell, and a loss of nutritional value.


4. Fresh Lychees
Storing fruits in the fridge can make them taste fresher and cooler, but you shouldn't keep them in the fridge for too long. Generally, it's best to eat fruits within two days of refrigeration. Lychees are no exception: if kept in the fridge for more than two days, dark spots will appear on their surface, causing the skin to blacken, which significantly affects the flesh inside. The nutrients in the lychees will degrade, and spoiled fruit leads to unnecessary waste.


5. Fish Sauce
According to research by scientists, fish sauce can typically be used for up to three years under normal conditions. Therefore, refrigerating fish sauce is unnecessary.
If you store fish sauce in the fridge, it will start to emit a strong odor that can spread to other foods, ruining their taste. So, if you have leftover fish sauce after a meal, it’s best to dispose of it.


6. Gourds and Squash
Gourds and squash are typically large or long in size, so storing them in the fridge is unnecessary and takes up valuable space. A whole pumpkin can last for 1 to 2 weeks, and even if it's cut, it can stay fresh for an extra day.
A whole pumpkin used for soup can be kept for 2 to 3 days, and if cut, it will last overnight. Therefore, it's best to make room for other foods in the fridge.


7. Rice
Rice is a staple food that we consume daily, often preparing it in the morning and evening. If, by chance, you have leftover rice, it's not recommended to store it in the fridge. The rice will absorb moisture and the grains will turn pale, losing their nutritional value.
Instead, consider feeding leftover rice to pets like dogs or cats, or share it with neighbors who have livestock. It's better to cook the right amount of rice to avoid wasting food.


8. Bread
In any case, storing bread in the fridge is a mistake. Slices of bread (or toasted bread of any kind) will absorb the cold air in the fridge, either becoming soggy and losing their taste, or drying out and hardening.
The best way to store bread is in a bag with ventilation holes at room temperature, which helps it last longer than refrigeration. However, if left for too long, the bread will lose its soft and airy texture.


9. Cà chua

10. Hành tây

Ngoài ra, hành tây có mùi rất hăng, có thể lây lan trong môi trường kín như tủ lạnh, làm cho toàn bộ thực phẩm khác đều bị nhiễm mùi. Bản thân hành tây cũng sẽ mất đi hương vị riêng của nó.


11. Coffee
Never store coffee in the fridge, as it can absorb the flavors of other foods and lose its unique aroma. Coffee should be kept in a dry place, away from direct sunlight.


12. Bơ
Bơ của bạn mãi không chín? Đó là vì nó nằm trong tủ lạnh. Để bơ xanh lên kệ sẽ giúp chúng chín nhanh hơn. Muốn tăng tốc hơn nữa, hãy đặt bơ trong một cái túi cùng với chuối hoặc táo.


13. Dưa hấu

15. Honey
If stored under normal conditions, honey can last for a long time. However, refrigerating it speeds up the crystallization of sugars, turning the honey into something resembling powder, making it very difficult to scoop and use.


16. Olive Oil
It should be stored at room temperature, away from direct sunlight. Do not refrigerate olive oil, as the cold temperature can cause the formation of white particles in the oil, which is condensed water.


17. Eggplant
This fruit cannot tolerate low temperatures. In the refrigerator, eggplant becomes soft and loses its quality quickly. It is best to store eggplant at room temperature (25°C), away from direct sunlight.

18. Potatoes
If the refrigerator's cool compartment is set to 7°C or below, you should avoid storing potatoes there. When exposed to cold temperatures, the starch in potatoes turns into sugar. This alters both the texture and flavor of the potatoes, making them less desirable and potentially harmful to your health. For this reason, it's better to wrap potatoes in paper bags if you intend to store them in the fridge.
Additionally, don't store potatoes in plastic bags, as this traps moisture. The trapped moisture leads to rotting since the bag doesn't allow the moisture to escape. Fresh potatoes can last for about 3 weeks in open air. However, never store onions and potatoes together, as the moisture from the potatoes can cause the onions to spoil.


19. Eggs
Storing eggs in the refrigerator is unnecessary, as it can cause them to spoil faster than usual. Additionally, when you remove eggs from the fridge and expose them to room temperature, the sudden temperature change allows bacteria to settle on the eggshell and potentially penetrate into the egg itself.
At room temperature, eggs can remain fresh for about 7-10 days, so make sure to consume them within this period.


20. Vegetables
Some vegetables should not be stored in the fridge for too long, such as carrots, cauliflower, cucumbers, tomatoes, and especially aromatic herbs with strong scents. These vegetables can affect the quality of other foods and absorb ethylene gas, which accelerates spoilage, for example:
- Cabbage and lettuce may develop spots and turn brown
- Broccoli and cucumbers may get yellowish patches
- Carrots may taste bitter when eaten
For vegetables, it is best to store them in dry containers, and make sure they are not wet when placed in the fridge. Purchase only the amount of vegetables you need for the day to maximize the nutritional value of your meals.
