4. Three-Color Che
There's a rumor that goes like this: if you want to experience some attitude, you should visit the "stubborn" che stall. In Saigon, this che shop is so particular that it doesn’t even bother to raise its voice. While there were once noodle shops known for scolding customers and porridge stands for berating you, now this che shop offers an entirely new perspective on what it means to "eat backwards." The shop, known by another name, Three-Color Che, is located at 142 Nguyen Phi Khanh, District 1, Ho Chi Minh City. Situated at the intersection of Nguyen Phi Khanh and Nguyen Huu Cau streets, it’s just a simple pushcart selling che, with a few plastic chairs for customers to sit. Although the setup isn’t the most visually appealing, it has gained immense popularity among patrons. From the moment the shop opens until it closes, customers continuously flock to enjoy the che.
When you visit Three-Color Che, you’ll witness people queuing up for their turn while the owner leisurely enjoys a cigarette while serving the che. Although the common business principle in eateries is that “the customer is always right,” here, the owner is treated like the true “king.” No chatter, no smiles, no light-heartedness—but no one minds. Customers patiently wait their turn, purchase, and leave. There's no rush, no urging, no loud voices. Everyone quietly waits for their turn. At this shop, you can savor popular Saigon che flavors such as black bean che, green bean che with ice, and che sương sa hạt lựu... once you try it, you'll remember it forever. One customer shared their thoughts: "Che Chanh, it’s delicious! The owner’s a man of few words, doesn’t sweet-talk customers, but his cooking is full of heart, and he maintains cleanliness. Occasionally, he takes a break to clean up, and they even have karaoke for everyone’s enjoyment. So charming! Despite the owner's reserved nature, the che is made with care and hygiene. There’s no worry about germs. And the owner, though a bit stubborn, has been making amazing che for decades, and yes, he deserves to be a bit "stubborn"—after all, his che is worth it. I love his unique style!"

The shop offers various types of chè: steamed banana, floating cake, apple stew, green bean tapioca, and white beans. Each spoonful of chè brings a delightful crunch of jelly, refreshing and soothing to the throat. The owner sells chè with sincerity, keeping the prices low despite the many who say she barely makes a profit. She just smiles and keeps the prices unchanged.

6. Chè Cô Lộc
Anyone passing through the corner of Đinh Tiên Hoàng - Nguyễn Đình Chiểu (District 1, HCMC) will be struck by the sight of a cart filled with colorful bags of chè. This is the chè cart of Ms. Bùi Thị Lộc (60 years old, from Quảng Ngãi), who has been making a living in Saigon for over 40 years with this very cart. Besides the wide variety of options on the menu at Chè Cô Lộc, what makes people come back every day is the opportunity to chat with the cheerful and welcoming owner. Ms. Lộc shared that she moved to Saigon at a young age to make a living.
Actually, calling it a shop is not entirely accurate, as it’s just a cart with a few chairs placed on the sidewalk, no tables. Ms. Lộc explained that despite the small size of her cart, it offers a wide selection, including green bean chè, black bean chè, lotus seed chè, grapefruit chè, sweet chè, floating cake chè, and even herbal chè... Chè Cô Lộc is the perfect spot for those eager to try something new!
