1. CU DO THANH DAT
Cu Do Thanh Dat is a well-established brand with nearly 50 years of history. Cu Do Thanh Dat guarantees all-natural ingredients in their candy, with no added chemicals. The honey, malt, ginger, peanuts, and sugar are all carefully selected of the highest quality. Customer satisfaction is the joy of Cu Do Thanh Dat.
- Ha Tinh has many Cu Do candy producers, and Cu Do Thanh Dat is known as the famous village brand in Ha Tinh city. The production facility now operates three locations to better serve customers: (Location 1: South of Phu 1 Bridge, Thach Binh; Location 2: Junction of the bypass road, opposite Cam Vinh gas station; Location 3: South of Phu 3 Bridge, National Highway 1B). This area has a long history of Cu Do candy production. Cu Do Thanh Dat is well-known far and wide, attracting many customers. People often buy Cu Do to enjoy with a bowl of green tea, gift it to friends and family, or take it home as a special souvenir. As demand increases, production needs to be ramped up. However, the candy still maintains its distinctive flavor, justifying its reputation as the most famous Cu Do in Ha Tinh.
- When purchasing, the candy is carefully packaged in boxes, adding value not just for gifting but also for home enjoyment or self-rewarding moments with loved ones.
- Using a fully integrated production process and electric pressure cookers, the Cu Do Thanh Dat facility (Ha Tinh City) has improved product quality, expanded scale, and developed the traditional craft of the family. Making Cu Do has been the family's legacy for generations, starting with Mr. Luu Van Anh (Thach Binh Ward, Ha Tinh City). He recalls: 'Back then, Phu Bridge was not built yet. Trade was mostly done by ferry. My family would make peanut candy and carry it to the dock to sell.' Since the 1990s, as the market economy grew, Cu Do production expanded. Today, Mr. Anh has more than 50 years of experience. From producing just a few kilograms of peanuts daily, he now runs four facilities, each producing more than 400 kg of peanuts daily. Not only did he keep the family passion alive, but he also inspired his children to continue the tradition. After graduating from university, his two children joined him in developing the family's business. In 2010, Cu Do Thanh Dat began using electric pressure cookers, marking the year they successfully registered their brand. After establishing the brand, Mr. Anh expanded production and invested in six electric pressure cookers, increasing capacity across four locations. The electric pressure cooker method ensures consistent temperature control, resulting in better peanuts and higher food safety standards,' said Mr. Luu Van Anh.
- To produce quality candy, Mr. Anh strictly selects ingredients. He personally buys peanuts from Thach Ha's coastal region, known for its richness and aroma. The peanuts are hand-peeled to ensure they are completely dry, avoiding the machine-processed ones which tend to absorb moisture. The molasses comes from Nghia Dan (Nghe An), and malt is sourced from the traditional production village of Ha Tay. According to his years of experience, making good candy requires precise temperature control and the correct proportion of malt and molasses.
- To further enhance his production process, Mr. Anh invested over 150 million VND in 2016 to equip machines for making rice crackers and baking the rice crackers. In his expansion strategy, he focuses on serving long-distance buses, creating a large, spacious area where buses can stop for a break.

2. Cu Đơ Bà Hường
After a period of quiet, even being overshadowed by the candy-making industry in the city of Hà Tĩnh, the tradition of making Cu Đơ in Hương Sơn has made a strong comeback in recent times. Several brands like Đồng Hồng, Trung Hoà, Thanh Sơn, and Bà Hường have emerged, with the most famous and largest producer being Cu Đơ Bà Hường from Block 12, Phố Châu Town.
- Despite producing thousands of Cu Đơ candies daily, the demand still exceeds supply. Bà Hường remains humble, claiming that her candy is similar to others in the region. What sets her apart, however, is her convenient location along National Highway 8A, making it easy to ship orders to distant customers. Additionally, her children have embraced social media for sales, increasing her reach. In reality, everyone knows that Cu Đơ Bà Hường stands out for its meticulous ingredient selection and preparation process, such as manually mixing the sugar, picking peanuts, and grinding ginger. She even insists on using traditional firewood to heat the candy, ensuring a deeper, richer flavor, while avoiding the use of motors, even if it slows production.
- Even now, after traveling to many regions and tasting unique local specialties, the sweet aftertaste of Cu Đơ Bà Hường remains unforgettable. The sweetness of sugar cane, the nutty flavor of peanuts, the warmth of ginger, the fragrant lemon peel, and the slightly bitter and aromatic green tea all combine to create a flavor that lingers in the senses. Every time someone returns, crossing the Ngàn Phố River, they are reminded of the delightful, fresh sweetness of the candy. Those who venture far can easily describe and share the love for Cu Đơ when asked about it.

3. Thanh Hạnh's Cu Đơ Candy
"Green tea with a hint of spicy ginger/Cu đơ Hà Tĩnh will captivate your soul." When visitors to Hà Tĩnh taste Thanh “Gù”'s Cu Đơ, they will forever remember the sweet, fragrant taste of molasses, the spiciness of fresh ginger, the crisp crunch of peanuts, and sesame rice paper. Each day, thousands of Cu Đơ candies are produced, but they are still not enough to meet the demand. Nguyễn Đặng Thanh, the owner of the Thanh Hạnh Cu Đơ business, humbly believes that his candy is similar to others, but his candy stands out because he puts in all his “heart,” “soul,” and “reputation,” which is what truly makes it delicious.
- In reality, everyone knows that Thanh Gù's Cu Đơ is delicious because he is meticulous about everything from selecting ingredients to the steps in the candy-making process, like fan-baking, selecting peanuts, and crushing ginger. As Thanh himself says, “Success is not an event, but a process, a reflection of the heart of the craftsperson and the acknowledgment from customers about the quality. That is the most important measure.” Truly, you can only see the difference in person, watching how he prepares the candy. According to Thanh, a dedicated candy maker carefully selects only the largest, most uniform peanuts, avoiding any moldy ones. The candy's consistency—whether chewy or crunchy, fragrant or not—is the unique secret of each maker. When the molasses reaches the desired consistency, the peanuts are added and stirred until they emit a rich, nutty fragrance. The key ingredient, ginger, must be carefully chosen—if it’s too old, it will be tough, and if too young, it won’t be aromatic. After the candy is made, it's poured onto paper. To remove it from the paper, a little water is applied to the back of the candy. Over time, people began replacing the paper with toasted sesame rice cakes, which adds extra flavor to the candy with their crisp texture and sesame fragrance.
- Born in Tri Nang village, Thạch Kênh commune, Thạch Hà (Hà Tĩnh), into a poor family, Nguyễn Đặng Thanh spent his childhood helping his family by selling molasses, eggs, and brewing alcohol. He soon realized that his hometown was blessed with abundant ingredients like peanuts, ginger, and molasses, ideal for candy production, and decided to experiment with making candy. Initially, he sold his candies to small shops. While his first attempts received mixed reviews, Thanh learned from them and committed to mastering the craft. At the age of 20, with a bit of savings, he moved to the city and opened his own shop. Overcoming numerous challenges and hardships, Thanh's family supported him in building Thanh Hạnh Cu Đơ, which has since become a prominent brand in Hà Tĩnh, beloved by customers.
- As for the story behind the name Thanh “Gù,” Thanh recalls, “During a candy delivery, I had an accident that affected my spine. From that moment, the name stuck with me, and it became a way for customers to recognize my candy.” With over 30 years in the industry, Thanh has made his mark with Cu Đơ, starting from humble beginnings. The years of trading have enriched his experience, and he is passionate about his work. He believes the success of Cu Đơ Thanh Hạnh stems from the devotion, ethics, and reputation that create a product distinctive to Hà Tĩnh’s legacy.”

4. Cu Đơ Phu Bridge
While not the original birthplace, Đại Nài ward (Hà Tĩnh city) is where the essence of Cu Đơ candy is preserved. The area, near Phu Bridge, has become known for the brand: "Cu Đơ Phu Bridge".
- The ward has only 154 households, but each one operates a candy-making workshop, earning it the nickname "Candy Village." It is the only village in Hà Tĩnh recognized for its craft under the "Enterprise Development Program for Women in Food Processing in Central Vietnam Phase II." As a result, this village hosts a large library displaying Cu Đơ candies through the ages.
- Originally, Cu Đơ was made with just molasses and peanuts, but today the ingredients have greatly expanded. The villagers have perfected a blend of molasses, sugar, malt, ginger, peanuts, and rice paper. These familiar ingredients create a distinct flavor. Some places make Cu Đơ with just sugar or molasses, and peanuts are roasted, but this method doesn't work as well. Peanuts should be dried to maintain their crispness. The process involves boiling molasses, sugar, and malt first, then adding the peanuts when it boils. This is the trickiest part since it requires constant stirring to prevent burning at the bottom. Finally, ginger is added. In hot weather, it cooks for an hour, known as "cooking well," while in rainy weather, it only needs 45 minutes to cook "lightly".
- The Đại Nài village has prospered thanks to Cu Đơ candy. Aunt Quế, now 53 years old, has been making Cu Đơ for four years. She makes three batches a day, using sugar cane, peanuts, and ginger from her own farm, while purchasing malt and rice paper. With these available ingredients, she earns a significant profit. Seeing how quickly and easily she earns money, her relatives have sold off land to invest in Cu Đơ production. Now, the whole family has received certification for their craft.
- The "Candy Village" stretches from Hà Tĩnh bus station to Phu Bridge. Buses traveling north and south regularly stop here so passengers can buy gifts. In the morning, the village is bustling with customers heading north or south. But by afternoon, it becomes quiet. As the day winds down, the air near Phu Bridge fills with the smell of molasses, sugar, malt, and ginger. The rich aroma of pure molasses, spicy ginger, and sweet malt creates an intoxicating scent that pulls in passersby.
Hà Tĩnh people regard Cu Đơ as the soul of their homeland. Families with children working away often send Cu Đơ with visiting locals. If no one returns for a long time, they send it via mail. Mr. Hùng, with five children living in the south, sends Cu Đơ to them every few months. He says, "They've been gone for nearly five years and haven't visited. I send it to remind them of home."
At first glance, Cu Đơ might seem unappealing with its rough exterior, and many hesitate to try it. But those who dare take a bite will never forget the experience. As the candy dissolves in your mouth, you can't distinguish the individual ingredients. It all blends into a sweet sensation on the tongue, with the warmth of ginger and the rich taste of peanuts lingering in the aftertaste. Cu Đơ embodies the essence of Hà Tĩnh people: rough on the outside, humble in name, yet containing immense inner strength. Could this be why people say, "Anyone who leaves Hà Tĩnh will always long for it!"

5. Cu dơ Ông Bà Thư Viện
Cu dơ candy is one of the famous specialties of the people from Nghe, leaving a lasting impression not only on locals but also on travelers passing through Ha Tinh, who always stop by to buy some to enjoy or take home as gifts. Especially during the last days of the year, you can witness the bustling atmosphere at popular cu dơ shops in Ha Tinh City, with buyers and sellers in constant activity.
Among them, people often choose to visit the cu dơ production facility of Ông bà Thư - Viện, a place renowned for its traditional family recipe passed down through generations. The sight of customers rushing in and out of the shop, buying cu dơ as gifts, is a testament to its irresistible taste, filled with rich flavors that reflect the simple yet deep spirit of the local people.
- Green tea with a hint of ginger - Cu dơ from Ha Tinh charms everyone. Today, Ha Tinh City is home to several cu dơ production facilities, each offering its own quality and pricing. However, Cu dơ Thư Viện maintains high standards by not compromising on ingredients such as peanuts, honey, or rice crackers to keep prices low. They prioritize quality over cost, ensuring their customers get the best product. Despite the higher prices compared to some competitors, they uphold the reputation of the famous "Thư - Viện" brand, built over 30 years of hard work.
- The secret to their success lies in the passion and dedication of those behind the business. In the past, their facility was located at 485 Ha Huy Tap Street, Ha Tinh, right at a busy intersection. The high traffic made it difficult for customers to stop and caused traffic congestion, which was a concern for the family. However, with the determination to preserve their traditional brand, they expanded by opening a new location at 548A Ha Huy Tap (100 meters away from the old shop), which is more spacious, cleaner, and more accessible, ensuring no disruption to the surrounding community or traffic. This new location has been operational since November 9th. Additionally, the family also serves customers at a third facility at the intersection of National Road 1A and Ha Tinh bypass, with clear signage and contact information for customer convenience. The three locations are: 485 Ha Huy Tap (Phone: 0393886112), 548A Ha Huy Tap (Phone: 0393797858), and the third location at the National Road 1A/Ha Tinh bypass intersection (Phone: 0944587579). The central office can be reached at 0912937899 for ordering or inquiries.
- The highest demand for cu dơ comes during holidays, the tourist season, and especially after Tet when the demand for gift candies increases. The family has been unable to expand further, but no matter where they are, customers will always find their way to buy, as the Thư - Viện cu dơ brand has earned long-lasting trust and loyalty from its customers. Through the years, Cu dơ Thư - Viện remains a popular choice for the people of Ha Tinh and visitors from afar, representing both happiness and motivation for the family to continue growing and evolving.

6. Cu Đơ Phong Nga.
In Thanh Hoa, there is bánh gai, in Quang Ngai, you can find kẹo gương, and in Ha Tinh, there is kẹo cu đơ. A special treat that makes the people of Ha Tinh say "No matter where I go, I always remember Ha Tinh," and anyone who has tasted it once will find it unforgettable. Initially called cu hai, this candy's name evolved when the Westernized education movement flourished. The term 'hai' was replaced by the French word 'Deux', which was then pronounced as 'cu đơ'. Nowadays, many establishments in Ha Tinh produce Cu Đơ, but the most famous is the Cu Đơ Phong Nga Factory.
- Located in Quán Gạc - Thạch Đài, about 5km from Ha Tinh city, Phong and Nga, a passionate couple from Ha Tinh, have built their Cu Đơ production facility to preserve and promote this traditional candy-making craft, establishing their brand as Cu Đơ Phong Nga.
- Driven by deep love for their hometown, Phong has tirelessly worked to make sure that their Cu Đơ represents Ha Tinh's famous specialty. Their product offers a unique and delightful taste, so memorable that anyone who has tasted it will never forget, and those who haven't will want to try it. This motivation led them to introduce self-made machinery into their production process, creating an automated system that ensures hygienic food safety standards. Every step from preparation to packaging is handled by machines, delivering a distinct taste and a satisfying experience.
- With his inventions in machinery, Phong has won three awards for creativity. The brand Cu Đơ Phong Nga has received numerous national and international accolades. 7. Cu Đơ Ông Lung
Since ancient times, Cu Đơ has been a distinct treat of the people of Hà Tĩnh. Many pass by without stopping, while others buy a package as a gift or simply stop to savor a bite of the Cu Đơ Ông Lung, which has a sweet sugar cane taste, the fragrant crunch of peanuts, and a spicy kick from ginger. Enjoying a piece of this treat with a cup of bitter green tea perfectly balances the sweetness. It's no wonder the people of Hà Tĩnh have a saying: "No matter where you go, you’ll always long for Hà Tĩnh".
- Cu Đơ can be found in many places along Highway 1A, near train stations in Hà Tĩnh. However, not all are as tasty and crisp as they should be. Cu Đơ Ông Lung stands out as a famous specialty of Hà Tĩnh, made with peanuts from the hills, crispy with evenly spread kernels, a thin, glossy sugar cane syrup, and a texture that’s just right—not too thick or too thin, with sesame and ginger sprinkled across the surface of the cake.
- Cu Đơ Ông Lung offers a memorable experience, with the sweet scent of sugar cane, the subtle heat of ginger, the fragrant aroma of peanuts, and the satisfying crunch of the rice paper. Made with strict quality control, it is 100% authentic and meets food safety standards, ensuring it is safe for consumption.
- Making the perfect Cu Đơ requires skill and precision. Cu Đơ Ông Lung uses pure, golden sugar cane syrup. The peanuts chosen are small, unblemished, and perfectly roasted without losing their outer skin. The rice paper is specially made for this candy, smaller than regular rice paper, with uniformly curled edges and a concave center, ensuring it does not crack, tear, or burn when toasted. The key to perfect Cu Đơ lies in the cooking technique: the syrup is boiled until hot, with chopped ginger and roasted peanuts added, stirring constantly to prevent the peanuts from sinking to the bottom and burning. The mixture is stirred until the distinct aroma fills the air, and the candy maker tests the consistency by dropping a little syrup into cold water. If it forms a drop that doesn’t flatten or dissolve, the process is complete.
With the meticulous care and years of experience in candy-making, Cu Đơ Ông Lung has earned a reputation far and wide for its unforgettable sweet and nutty flavor.
