Pickled Chicken Feet - The Secret to Never Having a Boring Drinking Session!
My husband and I have been neighbors since childhood, sharing similar tastes in food and drinks. Recently, he invited me to dive into the heart of Moc 6B Thanh Street to try out a French-style pub, rumored to be the oldest in Hanoi.

To reach the dining table, the two of us had to follow along a lush green path shaded by ancient trees, illuminated by the radiant glow of lanterns, crossing a charming wooden bridge over a stream teeming with colorful ornamental fish, arriving at an outdoor dining area in the lush, cool backyard, filled with gentle breezes and the rustle of sunlight. In short, I really appreciate my dear husband for taking the effort to discover a great restaurant with a beautiful, tranquil setting like Moc to invite me... to celebrate my birthday with a drink!

Moc specializes in local delicacies and Vietnamese countryside cuisine, so that day I got to taste the sweet, tender, savory flavor of river snakehead fish, accompanied by a plate of steamed chicken with lotus leaves, with its refreshing, fragrant meat and the aroma of fresh lotus, along with a bowl of soft, flavorful snakehead fish stew with hot white rice, eating until full. However, the dish that both my husband and I enjoyed the most that day was the simplest, and also the easiest to make: pickled chicken feet.

Pickled chicken feet is the ultimate 'savior' dish, combating food fatigue for the whole table
Despite the delicious spread on the table, truth be told, it can get quite overwhelming. Luckily, with a plate of pickled chicken feet, tangy, spicy, and crispy, it refreshes the palate and pairs well with alcohol, allowing the two of us to enjoy the meal to the fullest. Seeing that my husband seems to have a special fondness for this dish, I quickly asked for the recipe to try making it at home, as a way to gradually repay him for the delicious and meaningful birthday party!
Sharing the recipe for pickled chicken feet for the devoted wives
Ingredients needed: chicken feet, vinegar, lemongrass, garlic, ginger, peppercorns, white wine, white vinegar, sugar, and salt.
Soak cleaned chicken feet in diluted salt water for about 10 minutes, then remove and rinse with clean water. Place them in a pot of water, add a few crushed ginger pieces, and bring to a boil over high heat. Once the water boils, remove the chicken feet and immerse them in a bowl of cold ice water for about 15 minutes.

Soaking in ice water will make the chicken feet crispier
Change to fresh boiling water, continue boiling the chicken feet over low heat for about 20 more minutes, until they are cooked through. Turn off the heat, immediately remove the chicken feet and place them in a container of pickling solution (about 5g of salt per 1 liter of water), rinse the chicken feet thoroughly to remove any slime, then rinse again with clean water to remove the salt.
Put the chicken feet in a food-grade container or plastic wrap, place them in the freezer compartment of the refrigerator, and leave them for 3 – 4 hours. The pickled chicken feet will become much crispier.
Mix 400ml vinegar with 400ml water, 200g sugar, and 20g salt in a pot. Bring to a boil, then reduce the heat, add lemongrass, minced garlic, sliced chili, and a teaspoon of crushed peppercorns. Stir well, turn off the heat, and let the mixture cool completely.

Remember to pour enough water to cover the chicken feet.
Cut the lemongrass into 15cm long pieces, thinly slice, layer them alternately with the chicken feet and chili in a glass jar, and pour the cooled vinegar-sugar mixture over them. Ensure that the liquid covers all the chicken feet, add half a tablespoon of white wine, and tightly seal the jar.
After 2 – 3 days, the chicken feet will become crispy, tangy, spicy, sweet, and fragrant with the aroma of pepper, lemongrass, and white wine, incredibly delicious. Serve with a side of salt, pepper, and lime, and your guests or family will surely enjoy it!

Not only delicious for drinking sessions, this dish also effectively prevents boredom during the Tet holidays.
