Ingredients:

- Shrimp: 500g
- Pork belly or thigh meat: 700g
- Rice paper: 1 pack
- Fresh vermicelli: 500g
- Ground bean sauce
- Lettuce, aromatic herbs, chives
- Pickled vegetables
- Finely crushed roasted peanuts (optional)
How to make shrimp and meat spring rolls:
Step 1:
Lettuce, aromatic herbs, and chives, rinse thoroughly and drain
Step 2: Prepare the shrimp
- Clean the shrimp thoroughly, place in a pot, add 1/2 teaspoon of salt, 1 teaspoon of sugar, 1-2 tablespoons of wine (no need for water, the shrimp will release its own liquid). Adding spices enhances the flavor and eliminates any fishy smell.

- Cover the pot, place it on the stove, and cook until the shrimp turn red, stirring evenly. Then, scoop out the shrimp, let them drain, peel and halve, removing the back vein.
Step 3: Prepare the meat

Clean the meat, remove any hair, wash it thoroughly, boil a pot of water, add a crushed onion, then cook the meat for about 20 minutes until it's done. Remove the meat, put it in cold water to keep it white and crisp. Finally, slice the meat into thin pieces.

Step 4: Roll the spring rolls

Dampen the rice paper, layer with greens, arrange vermicelli, meat, and shrimp on top, then add a decorative sprig of chives (for both fragrance and beauty). Roll tightly.
Step 5: Make the sauce

Saute a bit of garlic in oil, add the ground bean sauce, stir-fry together, and adjust sweetness with additional sugar.
