PREPARING INGREDIENTS FOR STUFFED SQUID
• 1 kg whole squid
• 1 onion, finely chopped
• 1 carrot, grated
• 1 ripe tomato, peeled
• 1/2 cup chopped cilantro
• 1/2 cup finely chopped spring onions
• 1/2 tablespoon dried oregano leaves
• 1 cup rice
• 125ml white wine
• 125ml tomato sauce
• 1 tablespoon lime zest
• 4-5 cloves of garlic, minced
• Seasonings: salt, pepper, olive oil

HOW TO MAKE STUFFED SQUID
Step 1. Prepare the squid
Remove the head, internal organs, ink sac, slimy layer, and skin under cold running water.
Squeeze with white wine or lemon juice to remove the fishy smell.
Finely chop the squid head and innards to a separate bowl

Step 2. Prepare other ingredients
Peel and finely slice the onion.

Wash and chop the cilantro, and parsley.
Peel and puree the tomatoes.

Peel and grate the carrots.

Wash and dry the lime, then zest it.
Step 3. Prepare the stuffing
Heat oil in a pan. Add onions, garlic, and sauté until fragrant, then add finely chopped squid and sauté for about 3 minutes.

Add carrots and cook for an additional 2-3 minutes. Add the pureed tomatoes, cilantro, dried oregano leaves, and cook for about 2-3 minutes.
Add cleaned rice and stir well. After a minute or two, add wine and tomato sauce to the pot.


Add salt, pepper, and lime zest and stir over medium heat for 2-3 minutes.

Transfer the filling to a separate bowl.

Step 4. Prepare the oven and baking tray
Preheat your oven to 180 degrees Celsius for about 15 minutes before baking.
Prepare a deep baking tray, grease the tray with olive oil.
Step 5: Stuff the squid
Use a small spoon to fill the squid tubes, do not overfill, only fill about 2/3 of the squid.
Insert toothpicks into the openings at the ends of the squid to prevent the filling from falling out.
Arrange the stuffed squid on the baking tray, pour any remaining filling and liquid into the baking tray.

Brush some tomato sauce on the surface of the squid. Then, drizzle olive oil over the stuffed squid.

Step 6. Bake the squid
Cover the tray of squid and place it in the oven for about 30 minutes.
Remove the lid of the squid tray and bake for an additional 15 minutes, adding water to the tray if needed.

Step 7. Presentation
Remove the toothpicks from the squid, transfer the squid to a plate, slice into pieces, and serve hot.
