How to make snail stew with banana and tofu:
Step 1: Clean and boil the snails

After extraction, clean the snail thoroughly with diluted saltwater. Then soak the snail meat in vinegar for about 15 minutes for a white and crisp texture when eating. After that, rinse and drain the snail meat.

– Once the snail is drained, place the snail meat in a bowl, then marinate with a pinch of seasoning, minced garlic, turmeric powder, a bit of sesame, 1/2 teaspoon of shrimp paste, mix well and let it sit for about 10 minutes for the snail meat to absorb the spices.
Step 2: Prepare the Ingredients

– Peel the green banana, cut it into bite-sized pieces, soak the banana in lime juice for about 10 minutes to avoid darkening and remove the slime. Then lightly fry the banana, so when cooked, the banana will not be mushy and will taste better.

– Clean the pork belly, cut it into small pieces. Next, put the meat in a pan, sauté until both sides of the meat are slightly golden. Remove the meat to avoid soaking in oil, then marinate the meat with turmeric powder and a bit of seasoning for a richer taste.

Step 3: Cooking Snails with Banana Blossom
– After preparing the ingredients, heat the pan with hot oil, sauté a bit of onion for fragrance. Then stir-fry the snails until cooked, season to taste, and transfer to a bowl. Next, stir-fry the tomatoes until soft, add the banana pieces with a bit of sesame and turmeric, stir well for about 3-5 minutes. After that, add 2 cups of water, submerge the banana in the pot, bring to a boil, season to taste.

– When the water is boiling, continue to add the snails and meat, cook together for about 4 to 5 minutes, then add the tofu. When it's done, turn up the heat, add chopped spring onions, betel leaves, and basil, stir, then serve and enjoy.
