- 400g snakehead fish
- 200g pork belly
- 5 stalks of green onions
- 5 fresh chili peppers
- Ginger, galangal: each 1 piece
- Seasonings: fish sauce, salt, pepper, sugar, MSG, cooking oil
Instructions for Braised Catfish:
Step 1: Marinate Fish, Meat, and Prepare Ingredients
- Clean the fish, cut into approximately 1.5cm slices, and let them dry thoroughly before marinating.

- Marinate the fish with 1 teaspoon of salt, ½ teaspoon of pepper, 1.5 teaspoons of sugar, MSG, 3 tablespoons of fish sauce, 1 tablespoon of cooking oil, and 1 teaspoon of minced chili or whole chili pepper.

- Allow the fish to absorb the seasoning evenly. During marination, ensure to turn the fish every 30 minutes and marinate for 2 - 3 hours. If time is limited, marinate the fish for 30 minutes.
- Thinly slice the pork belly, about 0.2cm thick. To make slicing easier, blanch the pork in boiling water for 2 minutes. Marinate this pork with a bit of fish sauce.
- Cut the green onions lengthwise and then halve them. Cut the green onion stalks into approximately 3cm pieces.

Note: If you can't handle spicy food, you can replace fresh chili peppers with chili paste to reduce the spiciness.
Step 2: Braising the Fish
- Place a clay pot on the stove, turn on low heat. Add about 2 teaspoons of sugar and 1 tablespoon of premium fish sauce into the pot, stirring until the sugar and fish sauce dissolve. When the sugar turns into a thick brown color, add a bit more fish sauce, then add the marinated pork and stir until the pork firms up. Next, pour in the marinated fish. Season with a bit more fish sauce, 1 tablespoon of sugar, a pinch of MSG, and a bit of cooking oil.


- When the pot boils, add a bit of water to submerge the fish. Note that you should use boiling water to prevent the fish from becoming too fishy.

- Braise for another 30 minutes. When the liquid reduces, increase the heat and add 3 fresh chili peppers and a bit of cooking oil to give the fish a glossy finish. Add green onions and a dash of pepper, then turn off the heat.

Step 3: Finishing Touches
- Arrange sliced ginger around the plate, place the fish on the plate, add some chopped scallions, thinly sliced chili peppers, drizzle lightly with braising sauce, and sprinkle with a bit of black pepper.
